This is how we make... WITBIER (BLANCHE). A hay-yellow blanche, with a slightly hazy and cloudy appearance and a moderate, fine head. The scents are pleasantly citrusy and subtle aromas of spices gradually intensify as the beer becomes warmer. When sipped, it releases a beautiful harmony of cereals and citrus fruits, which mix and blend creating a delicate flowery and spicy balance. This is how we make... BELGIAN STRONG DARK ALE. With its classic brown color, reminiscent of a monk's tunic, Leön has a nice thick and persistent, hazelnut-colored head. At first smell, the fruity scent of fruit cooked in a wood oven fills the nose. Then, coffee aromas blend with woody nuances, which turn into fuller notes of chocolate as the beer becomes warmer. The heat of its 9% alcohol content immediately hits the palate, with a touch of sour cherries in brandy. This is quickly replaced by the taste of roasted cereals, which gently fill the mouth with notes of chocolate, cocoa beans and coffee. This is how we make... WINTER SEASONAL BEER. A dark brown beer, reminiscent of a monk's tunic, it has a thick and persistent head. Scents of chocolate blend with gentle roasted and nutty notes released by the cereals used in the recipe. The skillful use of Criollo cocoa by Domori, in its rare, refined and aromatic Chuao variety, characterizes Nöel Chocolat from the very first sip, and bring out pleasant and warm chocolate notes. These are perfectly counterbalanced by hints of roasted cereals, which evoke the taste of nuts. The bitter note of hops leaves a balanced bitter-sweet aftertaste, which satisfies the palate at every sip. We thank chocolate master Gianluca Franzoni for roasting the beans of this valuable and ancient cocoa, making our Christmas beer truly unique. This is how we make... SOUR ALE. A sour version of the classic Wayan. The color is the same deep, slightly hazy yellow, while the head is a bit rougher, but persistent enough. The sour nature of this beer is immediately perceived through the nose, although delicate notes of fruit and cereals emerge in the background. The taste surprises with its subtlety and the perfect balance between the sour component and the malty tones. The fruit and honey tastes, which create a perfect harmony with the acidity, make the whole experience smoother and create a beer that is very easy to drink. The finish is not particularly dry and very pleasantly sour. This is how we make... WITBIER. Open White is a deep yellow beer with a white, fine and persistent head and good lacing. At first, the scents are dominated by the aromas of cereals which, however, are almost immediately replaced by vegetal notes of green coffee, or a freshly peeled branch. As the temperature increases, hints of spices begin to emerge. Again, the first taste to appear is that of cereals, accompanied by subtle citrusy notes balanced by a delicate bitterness that is reminiscent of the white part of citrus fruit peels, and a touch of spices. This is how we make... BLONDE ALE. Even in its gluten-free version, Nazionale Gluten Free has a deep yellow color, with a very subtle hazy appearance and a white, fine, persistent head. The scents, too, are equally delicate. We find the same balance between the fruity, herbaceous and malty components and an unchanged lightness. Only when sipped, Nazionale Gluten Free shows a few minor differences in the interplay between individual tastes, due to the addition of rice - used to reduce the gluten component - which adds a dry note to the chamomile. OUR CIDER. A drink linked to the earth, to tradition and the quintessential biblical fruit, the fruit of sin… A link between the French-Belgian tradition and the typical apple juice of Piedmont, our cider is the product of the spontaneous fermentation of apples. Fresh and genuine, its color is clear, and it has a fine perlage. It smells of flowers and spring meadows, and leaves a delicate and persistent taste. Pairings: Sidro Baladin is great as an aperitif. Thanks to its intense taste, it is ideal for informal meetings, or even for a date. The chef recommends flavorsome cheese to go with it. The Baladin soft drinks recreate tastes and flavors that were once traditional, but with a touch of innovation. Free from colorings or preservatives, these special drinks are devoted to those who used to children, and to new generations alike
"Cola Baladin" is a soft drinks which contains no coloring or preservative and is produced with the kola nuts bought from the "Kola Slow Food Presidium" in Sierra Leone, and part of the revenues from the its sales will be donated to the Slow Food Foundation for Biodiversity to support the Presidium project. Another important and rather odd thing about this drink: the use of these nuts, and the necessary choice not to use artificial colorings, means that this new Baladin drink has a rather "unusual" color for a cola: IT'S RED! This red color sets it apart from more "commercial" products and makes it immediately clear that our intent is not only to make a profit: our drink is also a sign to show consumers that it often takes very little to play our part in supporting those who cannot even support themselves. IN SEARCH OF THE TASTE OF TIMES GONE BY. A journey searching for the taste of times gone by. A taste that our memory has registered but has been hiding for a very long time. This is Cedrata Baladin. Just a handful of great quality ingredients: water, natural brown sugar, lemon juice, carbon dioxide and the infusion of Calabria citrons, which give it the aroma and authentic flavor of Mediterranean lemons. Produced with simple and selected ingredients, it contains no colorings or preservatives: perfect for all ages! Pairings: Thanks to its acidic taste rounded by the use of brown sugar, Cedrata Baladin is a fresh drink for all meals (including a midnight snack!). DEDICATED TO THE TRADITION OF ITALIAN GINGER. Ginger Baladin is the result of years of Italian tradition and research. If it is true that the simplest things are the best, then this ginger is truly excellent. Just a few, carefully selected ingredients: water, natural brown sugar, lemon juice, carbon dioxide and the unmistakable infusion of herbs, zests of bitter. We also find some spices and vanilla, which give the drink its distinctive aroma and flavor. Note: it does not contain ginger! Pairings: Ginger Baladin is the undisputed king of the aperitif. It can be enjoyed on its own, or mixed with white wine. Given the citrusy notes of the zests, Ginger Baladin is perfect for cocktails with orange juice. THE MOTHER OF CHINOTTO. Spuma Nera, or "dark Spuma" as it was once called, may be considered the "mother" of chinotto. We have chosen to go back to the traditional recipe: a basis of chinotto (a myrtle-leaf orange drink), with the addition of the reddish part of rhubarb roots and an orange zest and vanilla infusion. Like all other Baladin soft drinks, Spuma Nera is 100% natural and no colorings or preservatives are added. A REALLY "ZEN" DRINK. With his soft drinks, such as Cola, Teo has managed to refine and modernize "good old" tastes, interpreting them in a very innovative way, as he has done with Cola. But it is Mela Zen that truly marks the beginning of pure experimentation. It is produced in small quantities with the clear intention to get in contact with those who drink it and create a new taste together. The recipe contains apples and ginger, two excellent agricultural products. Fresh, tasty, intriguing… Let's discover it together! Pairings: MelaZen is such a peculiar drink that it can be enjoyed on its own at all times of the day. Do want to serve it in a special way? Take an apple, cut the top part and keep it aside: it will be your lid. Remove the flesh (you can use it to make some jam!) and leave the apple in freezer for 12 hours. BEVI FRUTTA. Once upon a time, there was a rural world where we binged on fresh fruit stolen here and there from the trees in the Langhe, and on good jams made by our mothers. It has now slowly disappeared. This is why, together with our friend from the "Mariangela Prunotto" farm, we have decided to go back to our values and tastes with Bevi Frutta Apricot and Bergamot. This is one of the three Bevi Frutta by Baladin, made with the apricots from the Langhe and spices, the two ingredients of this experimentation by Teo Musso. The result is a unique juice (with a lot of flesh!) with an unmistakable and particular taste, which contains no additives or preservatives. Pairings: Apricot and Bergamot is perfect every morning, as it is fresh and tasty. Ideal to kick-start your day. KIKKE by Baladin are innovative delicacies made for us by Simone Sabaini: a special chocolate for beers. He started from his Modica chocolate and has interpreted every taste based on the combination with the 6 classic Baladin beers (Isaac, Wayan, Nora, Super, Leön and Elixir). The Baladin organic chocolate can be enjoyed on its own, or with the Baladin beers. Teo and Simone Sabaini have created the recipes using spices combined with "Nacional fino de aroma Arriba Superior Summer Selected" cocoa from Ecuador. Each bar is truly unique. All ingredients and spices are organic and come from Slow Food Presidia or from Fair Trade companies. The available tastes are 6: lemon and tangerine; white pepper and cardamom; coffee and ginger; 70% dark chocolate with coconut flower sugar; chili; muscovado sugar and licorice root. A panettone made with beer, born from the cooperation between Massimo Albertengo - owner of Albertengo Panettoni - a lover of leavened doughs and yeast who has elevated panettone to a world-renowned art, and Teo Musso, a man with a profound knowledge of the small yet complex and interesting world of yeasts, which he uses with great ability to create all his beers. After many experiments, they have developed two unique versions of panettone made with Xyauyù: a peculiar oxidized beer, whose taste is reminiscent of great passito wines. The simple addition of sultanas, candied orange zests and the icing made with almonds, hazelnuts, sugar and egg white make this a cake with inimitable fragrance, color and texture. Pairings: Panettone Tradizionale Baladin is perfect with Xyauyù, the ingredient that gave origin to this cake, and an excellent couch beer. Available sizes: net weight 1 kg
If you don't like candied fruit, this one's for you! We finally have a Baladin panettone without any candied fruit, made in cooperation with Massimo Albertengo, owner of Albertengo Panettoni. This lover of leavened doughs has joined his knowledge with the ability of Teo Musso to create a unique product. It all starts from a pillar of the Baladin collection, used in the preparation of this panettone and its traditional version: Xyauyù, an oxidized beer that brings us back to the world of passito wines. Other typical ingredients have been added, such as sultanas and the classic icing with almonds, hazelnuts, egg white and sugar. An interesting mix - without any candied fruit, an ingredient that some panettone fans love, while others hate. Pairings: Panettone Baladin should be served during the Christmas festivities, at the end of a meal or with a cup of tea in the afternoon. The result has gone above and beyond Teo's expectation and has added a new taste experience to our range of Christmas sweets. All the aromas of the 13 botanicals in the Beermouth recipe come out in a balanced and elegant manner. Xyauyù - the beer at the basis of this innovative spirit, and previously used in other versions of Baladin panettone - is a perfect ingredient for the soft, fragrant and flavorful dough of our new Christmas cake. The base recipe is that of traditional panettone, with natural sultanas, candied orange zest and an almond, hazelnut, sugar and egg white glaze; Pairings: Panettone Baladin should be served during the Christmas festivities, at the end of a meal or with a cup of tea in the afternoon.
