Featuring Chef Nobu Matsuhisa’s signature new-style Japanese cuisine, Matsuhisa Vail is located in the Solaris Plaza in the heart of Vail Village. Our dining room is open from 5pm nightly. Takeout available nightly from 5-9 pm.

Chef Nobu Matsuhisa’s fusion cuisine draws influence from his classical training in Tokyo and his life abroad in Peru, Argentina, and around the world, showcasing signature dishes such as Yellowtail Sashimi with Jalapeño, Black Cod Miso and White fish Tiradito.

    Amazing as always! We all had the Omakasa and every course was an experience. The service was impeccable with the appropriate wait between courses. We had beautiful views of Vail mountain from our table

    Matsuhisa was a very popular recommendation and I have to give the staff credit for doing a fantastic job with service, both our waitress and the hostess who accommodated us with an alternative reservation time. The food was delicious, but definitely (even for Vail) lacked value in my opinion. The black cod was amazing & thoroughly enjoyed the volcano roll. Drinks were also very well crafted! Would recommend for a special occasion, maybe more an appetizer type spot for my palate, but I’ve had better sushi in Japan.

    We very much enjoyed our meal at Matsuhisa, but there were a couple small glitches. The food was excellent and skillfully prepared. Service was attentive and pleasant. Cocktails were delicious and the wine suggestion was perfect. However, we have a food allergy in our group. We were very careful to mention it multiple times while ordering, but a dish with an allergen still made it to that diner. The restaurant was apologetic and kind enough to comp that meal, but diners with allergies should remain attentive because even at a restaurant this nice the kitchen and wait staff both missed the allergen. We were also a little surprised by the ambiance of the restaurant. Having eaten a few times at Nobu, we had heard that Matsuhisa was a little more intimate and formal. We found Matsuhisa Vail to be the opposite. The vibe was very energetic, and most of the patrons were dressed like they had just finished a hike. Not bad for a mountain town, but not the environment we were expecting.

    Wonderful experience - fabulous food with an incredible view. Will be back next time we’re in Vail. Staff was amazing and so friendly and hospitable.

    We frequently visit this particular location, it never disappoints! We look forward to trying all kinds of new things but we have our favorites. You can’t go wrong with their signature cocktails, love the yellowtail jalapeño sashimi starter. Love the king Salmon, miso cod never fails. Things we tried that were new for us and not on the menu. An amazing salmon roll and the sea bass with truffle. We ended with the date cake a la mode. So good, the only busy restaurant in mud season!

    Love Matsuhisa! So fresh and consistent! Love all the sashimis like yellowtail jalapeño, new style salmon, truffle albacore, tuna w/wasabi, tiradito. Also, love the crab tempura, salad, lamb chops, and hot rock.
