We have eaten at all locations and haven’t been disappointed. We chose to have the Omakase and it didn’t disappoint! Every dish was amazing ,well prepared and thought out. It’s nice to sit back and relax and let the chef create the menu and experience for you!
Best food in Vail. Prepared to perfection. Very clean eating too. Service impeccable. We had the tasting menu which allowed us to try a little bit of everything, and it was just enough food to not get us too full.

Service and food were superb, not pleased with seating. When I made the reservation I requested a specific table which we have had before. When we arrived that table was occupied, I had not been informed that the table was not available. We were seated at a long booth type situation that I had previously rejected as unsatisfactory. We were not asked if this table was ok, it was not ok. My wife’s view was out large windows towards the mountains, my view was of the back of the bar, lined with saki bottles. We will return to the restaurant but I will never accept that seating again even if it means forfeiting the reservation. My wife did not want me to complain at the time so I did not but frankly I did not enjoy the experience.
We returned to Matsuhisa for another great meal. Our favorites include the Matsutini, the Black Cod Lettuce Cups (don't skip these), and the softshell crab or shrimp tempura rolls. We have been very fond of the full tempura softshell crab in the past, but not available at this time. Desserts are can't miss. Inside, the restaurant can be quite noisy but as the weather improves the outdoor tables can't be beat. Great views, great service.
First time at a table facing outdoors and Solaris and loved the views! Always impeccable service, love the group effort in that and the servers that read your needs before you can even ask. The food is the best and the servers always have the best recommendations. Love the items unique to vail and the daily menu items. Nobu beef tacos and cauliflower were to die for, white fish roll and yellowfin jalapeño and salmon roll were amazing and wagyu on salt rock melts like butter in your mouth. Matsuhisa Vail is a must whenever we are in the valley.
Great experience and food. Went on a few recommendations as well as seeing it in Solaris over the years. Does not disappoint and the experience is exceptional!
The service was very friendly, explaining the specialities. The sommelier was exceptional. The first course, yellowtail hamachi was delicious. The rest of the meal was absolutely disgusting. We understand that opening post pandemic presents delivery and food retention challenges, but in that case, the chef should choose not to serve dishes if the food is not delivered fresh (eg. miso cod, lamb chops). The king crab tempura was mostly fried balls of flour and the tempura oil tasted old. This was a very unpleasant dining experience and the manager was sincerely concerned. I made it clear to him that I did not expect to have our meals paid for. I’m writing this review for the rest of you.
I’ve been to Nobu several times and this was the most disappointing of his chains and the most extraordinarily expensive stomach ache I’ve had in 60 years.
Great spot for upscale dining in Vail. The service is awesome across its entire staff, and the food is phenomenal.
Incredibly good sushi. The fish is very high quality and if you are going to here I highly suggested you center your meal around sushi, sashimi, and the special off menu sushi rolls. The food was just incredible. The entrees are also great too, and the bento box desert is perfect sized for two or three people to enjoy.

Food was very good however it was served on a cold plate and was barely warm when it got to our table.
We had the tasting menu. Everyone in our party felt it was a very poor value for the price. Not special at all. We have been a few times before, ordered off the menu and shared with a much better outcome.

Arrived early for dinner. Restaurant not busy. Open tables with view of mountains not occupied. Told they were not available. They were reserved for " people who talk to management ". Most of seating is behind bar and dreary. We said goodbye. A table with a view was suddenly made available.Too bad. Food was poor and overpriced. Wine mark-up absurd. Tempura with old oil, thick batter. Dated fish. Poor sushi rice. Nice servers though.

Our entire experience was fantastic! We had a table of eight and the service was great! We ordered a large Friday of different things and the timing at which they brought out the food was perfect! we didn’t feel overwhelmed by the food coming too fast every single thing we ordered was delicious, from the nigiri to the lamb chops. We also ordered quite a few cocktails from the bar and they were all delicious as well. We were there celebrating a birthday and ended up closing the place down, but the servers were not trying to push us out or make us feel uncomfortable about enjoying ourselves. Although it is expensive I feel that it’s worth every penny
Matsuhisa Vail was truly amazing and delicious. We went there as a group and had truly indulged with the menu. Beforehand, we did let them know that I have a gluten allergy and they were so incredibly careful and considerate. We started with edamame and shishito peppers for the table. From there, miso soup, all of which were delicious. Moving onto the main course, I had the black cod (which is a must-get), the tuna belly and yellowfin sashimi as well as a spicy tuna roll. THESE WERE AMAZING! Some of the best fish that I have ever had.
Wonderful first time experience celebrating our honeymoon can't wait to come back for many anniversaries to come. Service was excellent very clean place and had a wonderful view!
