The Amone concept represents and reflects the long journey of understanding my Lao heritage through food. At this point in time, my goal is to create a sequence from the mind of a first generation Lao-American on what will soon be presented on a plate. In recent years, a movement has formed showcasing the beauty of Laos and its rich culinary history alongside a dream to continue this in a concept-form. This concept is in honor of my family and people, but more specifically to my grandmother, Amonerut, who valued community gatherings and hospitality, and showcased a true pride in where she came from. A vision by Boby Pradachith - former chef/co-owner & director of operations of Padaek, Thip Khao, and Hanumanh in Washington, DC and Northern Virginia. He is a 2017 Zagat's National 30 under 30 and Eater's Young Gun who now resides in Seattle, Washington paving his own path.
