Consistently excellent food, accommodating servers, quiet enough that you can have a good conversation -- no need for shouting as in so many other restaurants in this city. I'm writing this review because my husband and I made the wisest of choices to reserve for Signature's special event celebrating Rioja wines. It was pricey at first glance at $250 per person all in, but by the end of the superb five course meal paired with abundant servings of excellent wines, we knew it was a bargain. Standouts? The Seafood Paella -- the best I have ever tasted. (Indeed, I usually abhor octopus -- but the piece nestled on my plate with shrimps and chorizo was succulent, not at all chewy, and deliciously flavoured.) Also rating 6 stars: the individual Beef Wellingtons. These were a triumph of technique and flavour with the crispest crust on the exterior -- a moist and tender and perfectly cooked 5 ounces of tenderloin inside. Marina, our hostess from the Faustino wine regions/vintners, was a delight -- giving just the right amount of commentary on each of the wines served. And the wait staff (as always at Signatures, I might add) were attentive without being obtrusive and most accommodating to ensure each of us was comfortably seated. As a final note, I gave the ambience only four stars -- not five -- because although our table was exquisitely set with linens and a gorgeous centerpiece of flowers, we felt lost in the large space. The restaurant can accommodate so many diners that the small group who attended felt swallowed up in the space. I couldn't help thinking about all the folk who would have truly appreciated this meal but who either hadn't heard about it or were not able to dine that night.
