About Fiestas Cafe & Cantina
Susan and Mariano use old family recipes brought to Colorado by Susan's great-grandparents and Central Mexico, tradition to Mariano to create great Southwestern cuisine. Among the favorites are chicken enchiladas in a white jalapeño sauce and blue-corn enchiladas served Santa Fe style with an egg on top. Handmade corn tamales are stuffed with pork and smothered in a classic New Mexican-chile sauce. The eatery in Edwards Plaza is brightly decorated with New Mexican folk art and paintings. More than 20 tequilas keep the bar—and patrons—hopping.

With our party of 6, they were ready to seat us as soon as we got there. Patrick was our waiter and he was very attentive and answered any questions we had. Service was excellent! We each ordered something different (quesadillas, enchiladas, taquitos, etc) and no one was disappointed -- all meals were fresh and delicious. I ordered the spinach enchiladas and they actually used FRESH spinach, not the frozen kind, cooked to perfection and rolled in fresh tortillas. So yummy! 'Wish we were still in town because I'd go there again in a heartbeat. You can't go wrong with Fiesta's if you have a hankering for Mexican food!
Very friendly wait staff. I had chili rellenos that were excellent smothered in green chili. My friends had blue corn tortilla enchiladas and a pork burrito also with the green chili. Excellent meal, good beer, atmosphere conducive to good conversation. We'll be back. Good find!!
Usually very good and fun place to eat. However on this occasion, service and wait staff seemed very disorganized. Brought "shrimp" enchilada instead of "spinach" enchilada that I ordered. I'm allergic to shrimp. After one bite, had to leave because I was having an allergic reaction. Ruined our family get together and the entire evening and next day due to reaction. Lucky it wasn't more serious.
Fiestas honors Open Table reservations. When we arrived, the line was out the door. The diners included a large number of locals speaking Spanish, a testament to the popularity and authenticity of the food. For our tastes however, the food was of average quality.
We went during the week at around 6:30. We walked in and had that "oh, oh" moment. Several empty tables had not been bused, and people waiting to be seated. We had made a reservation but it certainly did not make a difference. They were terribly under staffed. It took forever once we were seated to get service. Ordered drinks and it took 15 minutes. What should have been an hour meal stretched into almost two hours. We ordered as fast as we could, easy items like fish tacos, etc. and it still took forever. The hostess/manager does not know how to run a resteraunt . She had her staff running all over the place, then she ducked in the back while people piled up at the front door waiting to seated. The food was good, but not worth the bad service. Will not be back.
Folks were very nice. Restaurant was about what one should expect when you go to a strip mall for Mexican food. You aren't going for the decor or the plush, scenic surroundings. That said, we were a party of five, our table was ready when we arrived, the food came quickly, service was good and everything was pretty authentic, fresh and tasty. I'm a fan.
On our most recent visit and most likely our last....we entered the restaurant and stood at the front entrance for awhile...many staff looked up at us then looked down...finally someone came up to the front...I mentioned we had an open table res (I looked at the notebook on the front desk and saw our name)...the girl didn't seem to know what I was talking about. We were seated then ignored for a while...until someone came over and said the other gal is our server....she finally came over/took our order....I asked for water 3 times...we then ordered drinks/dinner....our food came before our drinks....and still no water....the service was awful and the food just so so. On our prior visit, I ordered ala carte and receive a full dinner plate (at twice the cost...I wouldn't mind paying if I actually ate rice/beans)...Pass on this place....
Our food service was pitiful, took almost an hour to get our dinner. Childs meal ordered as we sat and after inquiring many times for a status, arrived with the rest of the meals. One entree was received even later, forgot to place the order in. This restaurant should be written off !!
Service was poor the minute we walked in. Hostess/Waitress took 6 minutes to greet us, as she walked by numerous times. Then during one passing, looked at me and said, sorry, it will be a few more minutes. No other greeting, such as Welcome etc... Then after we sat, it took atleast another 10 minutes to get someone (same Waitress/Hostess) to greet us at the table for at a minimum, a drink order. When she finally stopped by, she was in a hurry.... I mentioned to her, for a large party (we were 6), I would expect a couple baskets of chips and salsa, she walked. The entire dinner experience was in this fashion. Once the meal finally came, it was not even close to being worth the hassle of the whole experience. Avoid this place at all costs !
I've visited and then lived in Edwards, CO for years. I've driven by this restaurant and never stopped. I had a house guest in the car and they suggested we give it a try.....and what a gem. Quaint place, not too large, outstanding staff and good food. We arrived around 5:30pm and by the time we left it was packed. Obviously others in the area had already found this wonderful gem in the midst of our community. I HIGHLY recommend it!!!!
We love Fiesta's! One of the restaurants we always book for a dinner whenever we're in the mountains. Food is not remarkable, but it is good. The staff is flexible, hard working and oh-so-friendly no matter how crazy busy the place is (and it gets CRAZY busy!).
We dined twice at Fiesta's and Jamie was our server. He is an excellent server.
Not intrusive, but still on top of drinks etc.
We enjoyed our meals and the margaritas are good.
I appreciate the Mexican Marg which has real like juice and no
Sweet and sour. Santa Fe enchiladas w the fried egg are a favorite.
We will be back!
Whenever we spend time in the Vail Valley we always visit Fiestas for lunch or dinner. It is family owned and operated and has been in business for many years. They are known for their blue corn enchiladas and white jalapeno sauce and they are delicious, along with most items on the menu. They have a good margarita list as well for those who want more than the typical "house" marg. Atmosphere is casual and it is family friendly, and the staff is always friendly.
Refused to honor an Open Table Reservation. Be wary of this bait and switch tactic. We arrived before our reservation time and the hostess said they do not accept reservations. I showed her the confirmation email from Open Table and she said it's something new we don't do, especially after 5pm. I found her especially rude.
