Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar. The bar offers a selection of craft beers, wines,  handcrafted cocktails and an extensive craft bourbon selection.Dinner Tue. thru Sat.     First, I love the energy of the staff -- they seemed happy to be there, and each was so knowledgeable about all facets of the food. The general manager helped us find a very good bottle to enjoy with our food (I liked the wine so much I bought half a dozen bottles when I got back home to Texas). From the beginning, our food was so good, beginning with the olives and the bread. The bread! Everyone at the table uttered a soft moan when eating the bread. The desserts also sang, including the olive oil ice cream and the smoky vanilla ice cream. Many other highlights. Well done, Basta!

    Recently had an outstanding meal there. The highlight was the 45-day dry aged ribeye, which was perfectly prepared. I opted for the mashed potatoes and creamed spinach sides, which were also fantastic. Great cocktails, hisoric building with plenty of charm, and servers were all on their game. I'll be going back soon.
