The name “Ichoume” comes from the address of this street. Ichoume is located on ‘1’ Harbour Street, Darling Quarter. That’s why we named the restaurant “Ichoume” (Choume is used for addresses in Japan. It's a way of breaking a municipality into districts. 丁目(Choume) is ‘city district’, so ‘1 choume’(Ichoume) is ‘1st [city] district’).The design concept of the restaurant is a hangout for adults.The menu is supervised by AKIKO ISHIKAWA, who has accumulated her career in many restaurants. Babylon Rooftop accepts reservations all year round with seasonal minimum spends. Please refer to the booking widget and your specific date for the minimum spend. We take groups of 15-30 guests. For all smaller groups and parties that do not wish to prepay a minimum spend, the venue is available on a walk-in basis. Share style group menus may apply over peak periods. The rooftop offers our meze menu only, if you wish to dine on the restaurant menus, they are only available in our Restaurant. Reservations for the Restaurant inside can be made through the "Babylon RESTAURANT" open table.Additionally, we take bookings of all party sizes for our Limoncello Brunch every Saturday and Sunday with arrival times of 12pm, 1pm or 2pm. Our Brunch reservations are $79pp for 2 hours of bottomless Limoncello and chefs meze. 10% surcharge applies on Sundays. 15% surcharge applies on public holidays. Built in in the former Adams Hotel in 1893, the Victorian structure was painstakingly dismantled, transported and reassembled in Hilton Sydney 1973 – where the restored mahogany bar and marble archways still awe guests to this day.

Frank Mac's. Gin & Cocktail Bar The original 1840s sandstone walls of the building Frank Mac’s now occupies a 120-person capacity bar which flows from outdoor seating on George Street, across two levels and into a back courtyard. Whereas the downstairs space feels cosy and intimate, dotted with vintage leather banquettes, dark jade and light orange velvet armchairs, low tables and a fireplace, the ground level you’ll walk into off George Street will reflect the energy of the bartenders working behind the almost five-metre-long oak bar. A handful of bar stools provide the perfect vantage point to take in the cocktail mixology while the dark velvet curtains, worn leather banquette seats and cosy fireplace of the ‘Snug’ provides groups of up to eight with a private space to retreat and relax.
