    We were able to stop by on a Saturday and were the only patrons at the time as golf course was closed for renovations. Tama, one of the owners, gave us the tour, as well as curated the tasting. It was interesting to hear the history of sake in Hawaii and to learn about the brewing process from start to finish. It was also amazing to see how a small, dedicated team can produce a high quality product very efficiently. The most noticeable thing about the tasting was that the sake had a completely different taste profile than any I’ve tried before as most of the imported sake is pasteurized and not temperature controlled; the Ginjo was more similar to other common Junmai Daiginjo on the palette and finish. They also have a prefixe/omakase dinner during the week that I’ll definitely be trying when we visit again. Thank you again for the excellent experience!
