Pilot is a restaurant that is truly us. Mal, Dash and Ross opened the venue with naive ambition in 2018.Hosting a 24 seat dining room and small outdoor area we are located at the back of the local shops in Ainslie, Canberra. We have chosen to offer a tasting menu to all guests. The menus created by Malcolm Hanslow and Syed Rashid are inspired by our experiences, the people we have met and worked with and nostalgic dishes from times past.Most of all it is about our love for food, fun and great hospitality.Our entire beverage list by Kane Nelson is all Australian. It includes wine, beer, spirits, aperitifs and amari. Thursday evenings we allow BYO with all corkage sales going to a chosen organisation for the month. Our non alcoholic and cocktail program created by Tom Opie uses native ingredients, local produce and ingredients that would otherwise be considered waste.
