Chef Ford Fry and Chef Kevin Maxey, together designed a “Mex-Tex” menu that plays to their own Texan roots, tracing the beginnings of the cuisine to the 1930s, when Mexican cooks first doctored up their dishes to suit a “Gringo” palate with Americanized elements, giving birth to the Tex-Mex dialogue. “Kevin and I wanted to do food we like to eat,” Fry said. “It’s natural for a chef to want to be true to a certain culture, and likewise, we wanted to do authentic Tex-Mex, because it developed where we’re from.”

    We had a great meal at roosters made so by delicious food, great vibe, attentive waiter. And a special birthday dessert! We had the mushroom soup and tomato bisque. Both were delicious. We also had the burger, braised short rib meatballs, and the smoked wings. All very, very good. The outstanding item of lunch was the onion rings. They were some of the best I have ever had. And, I have tried lots of onion rings. These were homemade, cut perfectly light batter lightly fried hot and seasoned perfectly. The tea was fresh crisp and clean and the dessert which was a piece of chocolate cake with raspberry Ice cream was outstanding. This is our first time as we were visiting Charlotte and we will definitely go back. The manager stopped by to speak to us and was friendly as he could be.
