Fondée en 2013, Capitol Cider est un restaurant, un magasin d'alcool et une salle de spectacle avec bar complet, situé au cœur du quartier Capitol Hill de Seattle. Leur bar offre plus de 170 cidres en bouteille et en fut, également 10 bières artisanales en fut, ainsi que des spiritueux conçus à base de pommes, incluant vodka, gin et calvados. Leur menu de style "Pub" moderne est entièrement sans gluten. L'atmosphère du bar est créée avec des panneaux sombres, une collection impressionnante de copies de tableaux célèbres, des livres antiques et des éléments architecturaux d'époque.
