Led by co-chefs and co-owners John Jackson and Connie DeSousa, CHARCUT Roast House is one of Canada’s most lauded restaurants.
The restaurant’s every detail – from the reclaimed local barn wood panelling to the mason jar chandeliers – transports the authenticity and soul of local, farm-fresh producers and their flavourful ingredients to downtown’s most energetic restaurant and bar.
With house butchered meats, homemade preserves, seasonal menus, thoughtfully created cocktails, local craft beers, and a bustling open kitchen, Jackson, DeSousa and CHARCUT are helping put Calgary on the world’s culinary map.

    We had an amazing experience thanks to Jesse! From the moment we sat down, she was warm and attentive. It’s rare to find someone who elevates the entire dining experience like she did. We’ll definitely be back!

    The food was good but for the fine steakhouse like prices the overall experience was just ok compared to other eateries in Calgary that are in that price level

    We had to ask for salt bc the $150 steak was barely seasoned. No taste no flavour. We would’ve give less tip if the option wasn’t 18%. This place gives steaks a bad name .

    Had a shared meal with a starter, appetizer, and main. All were excellent. Perfect meal for two older patrons. And service was exceptional.

    What a great experience! I had be fairly loyal to Char Bar, but as a solo diner, this was a fun and engaging experience! Hannah was super helpful with my order and the bar staff were absolutely incredible. Will be back!

    My husband and I enjoyed this restaurant. My husband had the prime rib and I had the clam vongole. Both were amazing. Ordered the house cheesecake for dessert. Not what I expected… but it was so good.
