El finalista de la temporada 1 de "Top Chef", Connie DeSousa, es cochef y propietario de este nuevo restaurante situado en el centro de Calgary. Su estilo de cocina es urbano/rústico y cuenta con un asador y una parrilla construidos a medida, un rebanador de estilo vintage y un bar de carnes frías artesanales. El CHARCUT es un lugar de reunión moderno y acogedor que combina la cocina de chef con toques italianos y de la Francia rural. Los ingredientes proceden de pequeños granjeros y ganaderos locales, y las especias las recogen a diario de su jardín propio, lo que minimiza el número de kilómetros que recorre la comida.     Ordered off their special lunch menu the all in one. Sandwich soup fries and cookies were all delicious. Friendly and fast.

    Very friendly welcome, our waitress went above and beyond to get us everything we ordered and more. The dining was very comfortable and the food was out of this world. They were flexible on meal choices, without spice and truffle for example. The wine was excellent and the rose I choose was incredible. Would highly recommend for anyone visiting Calgary. It was the perfect end and last meal to our amazing Canada holiday!

    We absolutely adore Connie Desousa and all of her concepts. The server we had was wonderful, he was attentive without checking on us too often it was just the perfect amount. We had a blue cheese and truffle honey to start which was so delicious. That said, we ordered a steak and found it full of gristle and chewy. It was not even all that flavourful which was disappointing and the potatoes with it were just ok. When you come to Charcot you are looking for a tasty meat filled experience, and we just didn’t get that this time.

    1. Difficult access and parking due to construction and clusters of drug addicts. 2. Poor selection when it comes to steak. To enjoy a ribeye, I would have had to get a 32 0z monster. Strip steaks were too thin and overcooked. Sides were tasty. 3. Loud, annoying electronic drum music pounding.

    A much needed break from the day! Jessie (Jesse?) and the bar is still fantastic from my last visits and recalled preferences. Had such a lovely evening to myself and a friend joined and had a great cocktail experience as well. Love what y’all are doing here, can’t wait to be back!

    Food was very tasty and good value as well. Service was excellent. Our young waiter, Phoenix, was knowledgeable, attentive and personable. He was kind and polite too. When we left, he hurried to hold the doors open for my mother in law.

    The food was good, however steak was very grisly/fatty. Great service. Tables are getting a bit worn.
