Blackbelly works exceptionally close with local ranchers, going steps further than simply receiving and butchering whole animals. The team contributes to research and development, feeding programs, and other conditions that ensure the final product maintains the highest standards of quality, with low quantity production. Further, the two primary suppliers of Blackbelly’s meats – family-run, Carter Country Meats and Boulder Lamb & Meats - have always applied organic standards to their practices, but they have taken recent steps to deepen their commitment by investing in official organic certification from the USDA. For its produce, Blackbelly primarily sources within a few miles of the restaurant. A few examples are Oxford Farm, Red Wagon Farm, Isabelle Farms, Cure Farms, and Two Hound Farm. These farmers provide an amazing example of Colorado’s bounty. This in turn affects the menu decisions Chef Hosea makes on a regular basis.

It was hard to choose from some great restaurants while spending a couple in Boulder but we are so happy we chose Blackbelly Market for our special dinner. We didn’t hold back, either . We started with the charcuterie board, how could you not, then shared the pigs ears with a chili sauce and some greens so so good. Frankly if the pigs ears had a few more greens I could have stopped there and been exceedingly happy. My husband had that evening’s beef selection, a local waygu filet and I had the lamb, prepared sliced thin atop a delicious sauce with squash. One of the best preparations of lamb I’ve experienced. Not to forget the elevated side of broccoli with a smoked balsamic, excellent as well. Our waiter also elevated the meal with his guidance, knowledge, friendliness and perfect timing of each course. We felt welcome and never rushed We appreciated all the thought that the kitchen and staff put into making Blackbelly such a special experience and highly recommend a visit.

I can’t begin to describe the fabulous flavors, each bite of the terrific dishes we had, pig ears, octopus,
shrimp, pork belly, lovely green beans with a” tomatoey” dressing. The relaxing atmosphere, casual dress, and excellent, friendly service makes Blackbelly Market one of our faves.
Should you be lucky enough to sit at the Counter, the show is worth a million dollars...... but you have to be a foodie to begin with.

Once again Blackbelly proves that they are the bestest restaurant anywhere!
Food was all amazing. The service is perfect curtesy of the best bunch of wonderful people anywhere. Tonight was particularly wonderful. But I guess I say that every time. All I know is that every time I leave I feel like the luckiest guy on earth to have eaten their food.
To anyone considering dining at Blackbelly, I say: Don’t walk... RUN!

My wife and I went to Blackbelly Market for our 20th anniversary. It was a great evening. We recommend the Counter seating. It was a treat to watch and chat with the staff preparing the the food. The food was amazing. Get the crispy pig ears!

second visit -- still very pleased with the experience -- although the noise level inside is hard to have a quiet conversation. Outside on the patio is just fine along with a Colorado sunset.

Service and food was outstanding! Keanu (I think it's spelled that way) was are server and he was very helpful with recommendations on the menu. Food was delicious and cooked perfectly!

The flavours were exceptional and the ambiance in the restaurant were great. Unfortunately the octopus dish was undercooked and some dishes were over seasoned. We did pass on feedback to the staff.

So good. Really enjoyed sitting at the high top overlooking the kitchen. Food was very well presented and tasting. Decently priced for the quality of the food. We got a free app, which was amazing. Love that everything is locally sourced or farm raised, makes it really interesting to hear the farms/locations. We were just visiting boulder for the weekends do definitely very pleased with making a reservation here. Definitely recommend making a reservation. Would 100% go again when back in town.

Simply the best restaurant in boulder, artisan food, squid salad is simply heavenly, the wagyu with the delicate reduction is beyond reproach. Go and visit this establishment as soon as you can

Spectacular meats, in my experience the best in Boulder. My main complaint is self-directed: I often order non-red-meat dishes at Blackbelly, ones that sound really intriguing, and it's best to stick to their great meat dishes.

Service wa great. Attention to detail with everything. Our party had the burratta, greens. Plates were salmon, chicken,pork and lamb. All were very good. Lamb was a little tough but he rest of the plate was very good. Bread was great.

A short 12$ beer was a little much. Cocktails were good wine very good. Overall drinks are a little pricey. 12$ for a plate of greens is also too high.

Amazing food! Nothing like it in town. Sort of off the beaten path. There are lots of farm to table restaurants in Boulder, and some are super pretentious. This place is friendly, beautiful and the food is beyond description. The fresh meats they source locally are the best of course, but all the carefully crafted small plates, such as the broccoli in the anchovy dressing and the asparagus and mushroom dish offer a unique, unexpected twist on favorites. If you sit at the counter, you get to see the food prep and chat with the chefs who go out of their way to tell you anything about the food, the process and you even get to try random things. If you are there for a special occasion, a date or such, a table might be better, more quiet. Great people watching too. Yup, definitely a favorite for us.

Blackbelly has an interesting menu, not just meat! The counter seating at the open kitchen is fun. This is a fun spot for dinner.

Our first time at Blackbelly. We’d just moved to Boulder, bought a house and celebrating a birthday. Emily was our server and she did an excellent job of explaining the philosophy behind Blackbelly. She let us know how the menus worked but all in a way that was totally no pressure. She really knew the menu items and made the choices sound delicious... again it was genuine..no hard sell. We started with appetizers of sausage, chefs meat and cheese and char sui. All were excellent. Mains were the lamb special, rotisserie chicken and house burger. Again, delicious and everyone was happy. No room for dessert, but Emily made sure that the birthday boy left with dessert to go. Great place to go for a special occasion, visiting friends, or just to treat yourselves!
