The flavors over everything we ate exploded in our mouths and we could not have been happier with the variety or uniqueness of the food. With that said, the service unfortunately, did not match the level of the food quality. The time between courses was a bit too long and there was a period where we did not see our waiter for over 30 minutes. Service was good, but not up to Melisse/Rex. For example, I spent 5 minutes trying to find the Somilier. But once we did, his recommendation was spot on. (Next time, though, refill my glass.) Truffles were great--but the tablecloth got nearly as much as I did.
I won't go as often as I might because of the $100 per person cancellation penalty. We were a group of four, but one of us got very, very sick the day before. I would have loved to have moved the date so all four could go, but that would have cost me $400. I can't really take the chance of having to pay $100 per person not to eat. I realize why they do it, but it's an issue.

The staff warmly greeted us and immediately took us to our seats. The cocktails and wine options were great. We had a five course meal with a wine paring and loved every dish. The staff was very accomodating in allowing a substitution on one of the courses for my wife. The staff was engaged and friendly but not intrusive. All the people in the restaunt seemed to enjoy their food and beverages.
One of the standout items was the dessert. It was farirly simple as far as the ingredients went but the flavor and textures made this one of the standout dishes. Hats off to the pastry chef was David!

Here in Los Angeles Area, people think, that a well cooked steak, eventually with a (frozen) Shrimp on the top, is the way to go. Their service was excellent. Even the valets were attentive after we had parked on the street. We were welcomed and seated immediately. We were given adequate time to settle in and the wait staff and the bussing staff were all fantastic! Given the high prices you might expect a little snobbery, but there was absolutely none. Truly outstanding service!
Then there is the food. It was amazing! We chose the Chef's Menu, so we very luckily had come with big appetites! 15 courses of bliss! We were excited for and really liked the wagyu but come here if you love all seafood! The decor is certainly simple but also elegant in a very modern, California style.
We went for the three-course menu and thoroughly enjoyed the starters and main course. However, when it came to the deserts, we found a definite departure from the more natural approach we tasted in the other courses. So, the finish was a bit artificial, with too much work being done with the ingredients which resulted in muted flavors that were over-powered by an overall sweetness.

You want beautiful ingredients, expert, unique preparations and excellent service. You get all three at Providence in an upscale, yet relaxed setting. We selected the chef's menu and weren't disappointed. Each dish was well-conceived and meticulously assembled. My favorites were: spot prawns seared on hot soapstone and sea urchin with summer truffles topped with a thin slice of lardo. Service was attentive but not fawning. Wine pairings were spot on. The food is creative and perfectly prepared and presented. It is also very, very expensive. As one for whom that makes it quite a reach, I hope at that level for something transcendently great. I am not sure the food reached quite that level, at least not for me, though it was certainly excellent. But in the end I prefer food that's a bit less understated.
