A word from Mountain Standard
From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking.

The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.

Service, like the cuisine, will have that perfect balance of providing a first class dining experience with a more casual vibe. There is no smoke and mirrors here - no fuss - just simple, honest, from the heart service and cooking. The beauty of the creek side location is mirrored by the high energy vibe of this dynamic restaurant.

This is down to earth american dining with incredible flavors. We had the lunch special chicken and dumpling soup which was hearty and flavorful. I had the leg of lamb salad with warm chickpeas, olives and feta and my husband had the seasonal version of the grilled chicken salad over a bed of green with fresh veggie and fruit marinated in sherry before grilling. Both were fabulous and larger portions than their sister restaurant Sweet Basil. We both had non alcoholic drinks which were delicious, the 'smash' lime, cranberry juice and pineapple juice with mint and the raspberry lemonade. The atmosphere was warm on a cold day by the fires of the open kitchen. Arianne our server was delightful and knowledgeable.

The food here is fantastic. The steak and trout were amazing but the big star was the pimento cheese with bacon jam and charred bread. Fantastically rich. Had to take half of it home to save room for the entrees.

I booked our reservation with open table via tripadvisor. I requested a window table for 6 at 5pm. The request was granted and we have a beautiful view of the creek and mountains while dining. They were having a special beer tap takeover and for $15 we got to taste 6 beers. We had several appetizers and each of us got a different entrée. The October special of $20 for any entrée was great. I had the pork and it was delicious and my partner had the stripped bass...also great. We had John..as a server and he was very attentive. He split our appetizers and beer flight on our checks without asking. Everyone was very happy with our farewell dinner in Vail.

We dined there last week during restaurant week, and this was our favorite spot by far. Loved the atmosphere and watching the cooking in the open kitchen. Had a great waiter who gave great suggestions. The manager was attentive as well. The bruschetta was delicious and beautiful to look at. I had the lamb and my husband had the trout. Both excellent. Bread was perfect, as well. Great experience all around.

We visit Vail at least 4 times a year so when we saw that Sweet Basil was opening Mountain Standard we were intrigued. It is now our favorite restaurant. Food was out of this world, including the best Bloody Mary I have ever had. The bone marrow appetizer was melt in your mouth delicious and the port tenderloin sandwich was amazing. The service was excellent as well.

We dined at Mountain Standard for our anniversary and had a great time. We ordered autumn bisque (amazing) and then shared crab legs and Colorado Bass (OMG). Finished with peanut butter pie. The food was really good, and the service was outstanding. The bar was hopping, but it didn't interfere with our romantic meal. Very nice place!

My wife and I drove from Denver to meet my brother who drove in from Grand Junction, Vail being about halfway between us. Mountain Standard was well reviewed on Trip Adviser so we decided to check it out. The restaurant experience exceeded our expections. Rather than the usual app/entre/desert, we tried almost all of the appetizers and made it a tapas-style dinner. Unique flavors, well executed concepts, and world-class execution combined to make each dish truly exceptional. The staff was also very friendly and helpful. In addition, the beer selection was top-notch. At any price, I would strongly recommend. Considering their reasonable prices, this is one restaurant you cannot afford to miss if you're anywhere near Vail.

I have eaten at Mountain Standard a few times. This time, my server accidentally spilled a glass of red wine on my white sweater. She was very apologetic and it was an accident. However, the way the manager handled it was very rude. She relunctantly came over, did not even look at my sweater and put her card down and said, send me the cleaning bill. No compensation for the spilled wine or any comps until my son brought her back over and complained, she then compensated a small amount off of the bill. Handled very badly!

With so many great choices in Vail, this is clearly our favorite so far (although we have not been to its sister location). The roasted olives with pine nuts and golden raisins are "to die for". Between the trout and the pork tenderloin, we'd recommend the trout. The pork was good; a very generous portion of 10-12 ounces, however, it was a little tough. Wait staff and the manager were very friendly and engaging. They truly enjoy what the do, and it shows. Bravo!

Stripe Bass was excellant, plated nicely--skin side crispy yet fish was moist. Wife's steak done exactly as she requested and butter tender. The hot olives dish and crab/corn soup as starters were great. All of this this was served in a quiet. low light dinining area with comfortable, spacious booths--and should you want, seating with a view of the chefs working in the kitchen--who unlike TV seem to be a harmonious and non-shouting group.

I just spent a week in NYC dining at all the HOT new restaurants and now vacationing in beautiful Vail, CO. I expected very good but not world class food. Well, Mountain Standard delivered world class food and served it in a relaxed, comfortable atmosphere. Our server, Lisa, was top notch... not stuffy or formal, but knew every ingredient by heart. She was a delight. Try the coal roasted olives and the pimento cheese as starters. The stone fruits were amazing! Everything we tried was so exceptional that we returned for lunch the next day and dined on more exceptional cuisine.

We stopped by Vail en route from Aspen to Boulder. This is steps from parking garages. In great location behind main street shops overlooking a small park and steam. Open air but under roof. Great, tasty, and creative presentation of good food e.g. warm olive, raisin, and pine nut appetizer and great salads and sandwiches. Good-for-you food doesn't have to be dull, or over-spiced, or boring.

If you are a fan of Sweet Basil (located above Mountain Standard), you will definitely love this restaurant. The menu is much different than Sweet Basil, but the same thoughtfulness and care is put into their food--resulting in a delicious meal. If you're a serious wine-o that needs diversity in the wine list, then this might not be the best place for you. Even though the wine by the bottle list was short, there are bottle options that are top notch. We are going back to Vail in two months, and Mountain Standard is now on the short list of our favorite restaurants. Rotisserie chicken, beef tartar, and the pimento cheese app are amazing. Shrimp and grits should be missed. I can't wait to come back and try more things on the menu.

This restaurant came highly recommended so we were excited to fine here on our recent stay in Vail. We had a reservation and upon checking in were lead to the table right next to the restrooms. We asked if there was anything else available (there were several empty tables near the front of the restaurant) and the hostess begrudgingly sat us at another table. We wanted to try as many things as possible so we ordered a plate from each course. We found that all three courses were fairly bland and lacked much flavor, including the kids meals. Overall we were disappointed as we had looked forward to a goody type of dining experience.
