A word from Matsuhisa - Vail
Noted chef Nobu Matsuhisa in collaboration with Nobuko Kang, created this exquisite establishment where sushi is an art form and the patrons are famous or look as if they should be. Located in the Solaris building in the heart of Vail village this modern design restaurant is cool and urban to the nth degree. People fresh off the slopes relax and dine on creative delicious cuisine. Try our omakase- the chef’s choice menu of what's freshest and most interesting that day. Other favorites on the regular menu are the Chilean sea bass topped with fresh black truffles or the black cod marinated in sweet miso.Continued

Diner Reviews
  • "We enjoyed our Matsuhisa Vail dinner very much, but it doesn't compare well to the other Matsuhisa in Los Angeles, or other Nobu locations. The fish was very fresh, but not cut as well or generously as at the other locations, so it was disappointing in that regard. The view of the mountain is spectacular and it's a beautiful restaurant. Try the yellowtail with jalapeno, the rock shrimp tempura, ceviche Nobu style - all delicious."

  • "The food is fresh and creative. Andreas knows his wine and has great suggestions. We sat at the bar. The bartenders were short tempered and obliviously didn't want to be there. That was a buzz kill."

  • "This is a noisy restaurant so if you want peace and quiet this is not for you. Tables a bit too close together but overall a nice room. All the food was excellent from the tempura, sushi and sashimi but service from our waitress was dreadful. In fairness the place was busy and short of staff but that does not excuse the sheer incompetence of the server. Totally disinterested in our needs and getting an order to her was a nightmare, completely ignored our request for drinks. To cap it all when I asked if she would arrange for our hotel car she said yes then did nothing. We ended up calling ourselves. Still in the end it cost her a generous tip!"

  • "The food was great, the service was very good. The party that sat next to us was rude and obnoxious but we didn't let it ruin our evening"

  • "I continue to lack any sort of satisfaction with this restaurant. The service has always been inconsistent and the value is poor. I love paying for good sushi but this place misses the mark obviously very concentrated on high per person billing and really steals the experience. Go to sushi den and learn how to make money more subtly!"

  • "I had been looking forward to dining here for weeks! Most of the food was excellent but our crispy fried rice was a few stages beyond crispy and our service was limited at best. I am a huge foodie and the food concepts did not disappoint but the execution was uneven and service was spotty. Highly recommend trying the cod, yellowtail jalepeno, king crab tempura, and shaved ice smores dessert (odd but tasty)"

  • "The noise was terrible although the quality of the food was very good. I find the decoration very poor: It looks like a cafeteria. The noise was so loud that it was hard to hear our friends in our table of 4. The place is very expensive and in fashion now, but I don't think it will last."

  • "This was my fifth time at Matsuhisa Vail. I've been to many of Nobu's restaurants and this is by far my favorite. From the view of the mountain, to the outstanding service, every detail is so fine tuned and wonderful. Every dish was so amazing and flavorful. The waiter was so helpful in suggesting new dishes to try. I send all my friends who travel to Vail to Matsuhisa. I look forward to returning!"

  • "Wonderful evening. Enjoyed so many delicious dishes!"

  • "What a huge disappointment! Birthday dinner and what a waste of money! Fish was sliced so thin you could barely taste it. Skimped on fish and price did not reflect what we were served. 8$ for a soda! Original restaurant in LA was go to place - they should not even be named the same."

  • "Amazing Food. Expensive. Very crowded and long wait even when you have a reservation. Excellent service though. Huge open venue, high ceilings, modern. Super rich Spanish crowd all decked out in their fur."

  • "If you are a fan of Nobu in any form, then this restaurant is for you. We seek out specialty Japanese restaurants whenever we travel and this one does not disappoint. Everything is amazing and the fish is delicious--even for a mtn town. The service is always great, but Dorian is exceptional. Very attentive and great recommendations. If you are in Vail--dont miss the best sushi on the mtn."

  • "Cool place and good food but very disinterested server. For the price, it should be much better."

  • "Food was not that good, service was not that good, and yet they over-charge you. Price level is excessively high."

  • "Food was wonderful. Waiter was very helpful with menu, although he did forget something we ordered.."

  • "Hip scene in Vail. Great food. Expensive but understandable, it's Vail and Matsu. Terrible hostesses could ruin business. They are not friendly or accommodating. Long empty tables do not get filled because they are too busy telling guests there is no flexibility or tables. System does not work and ladies are classic hostess snobs. Met with same attitude multiple times. Only 2 hrs free parking otherwise be prepared to pay."

  • "The food is exceptional, unfortunately the service is NOT. The servers have obviously not been trained in fine dining service. To get any sort of service, we literally had to stop servers who were walking by to ask for typical things to which the waitstaff should automatically attend - such as enough menus for each diner at the table, water refills, chopsticks for all diners, drink orders, etc. etc. When we were actually able to flag someone down to make a request, we were treated brusquely. This has been a favorite restaurant for our family vacation in the past, but we will have to skip it the next time we are in town. We like to be treated politely and with courtesy, and Matsuhisa no longer provides that type of service."

  • "Instead of ordering appetizers and entrees, we shared small-plate (tapas) style. All of the dishes were fantastic. Standouts included the tempura crab, lobster in garlic sauce, and the blackened cod. Do not miss the sesame fudge dessert. It's served with a smoked sea salt and a bite of the fudge with a bit of crunchy salt was perfection. Book in advance during ski season if you want a reservation within peak time on weekend. We waited too late, and openings were 5:15 or 9:00 pm, so we went early, but there were tables around us filled with families and kids (spring break), so not exactly romantic at that time of day."

  • "Matsuhisa in Vail lives up to its name with excellent, food, service and atmosphere. We will definitely be going back. They even have a gluten free menu which is really helpful for those with a gluten sensitivity."

  • "I have been to many Nobu locations and this is by far the best. We had various sushi selections as well as a baked black cod dish. All really amazing! Bar was great. Wonderful shaved ice chocolate dessert. Highly recommend."

  • "It was really really noisy, we could not hear our conversations. Food was great, but we really want to eat and leave the place"

  • "Loved Matsuhisa for the second time last week (February, 2014). It is centrally located near the newish Solaris Hotel in Vail Village. The service was impeccable and the specialty cocktails delicious. Notable dishes to share as appetizers included the spicy tuna and crispy rice, the lobster roll, and the miso cod. While pricey, the amazing food and lively atmosphere make this place worth the splurge every now and then!"

  • "We didn't think we could get awesome Japanese food in the middle of the mountains but now we stand corrected. Everything we ordered was excellent and the best we've ever had. The hostess was a big stumble -- seemed inexperienced and a little too casual for a place with this reputation (and prices!) but the service once we sat down was excellent. We would definitely go back and have been recommending this place to friends. It is pricey, however, but if you want an out-of-body experience then save up."

  • "Ate here last year during ski vacation and was disappointed by service and food. Decided to come back since family wanted sushi. Thus, took seats at the sushi bar. Definitely the way to go. Sushi was delicious and fresh as the sushi bar chef that night was also from New york -we had great conversation and excellent recommendations on the freshest sushi and meal was great."

  • "Is a place to enjoy eclectic food in a great atmosphere, with a vary friendly service and a beautiful decoration with warmness even the big size place"

  • "Service erratic: three dishes served simultaneously with no room for plates. Next dish took 20 minutes, was served cold. Dessert also served slowly. Too noisy to think. Prior visits have been great but this was so offensive, we cancelled our second reservation for later in the week."

  • "Amazing appetizers!! Loved the tiraditos and the variety of sushi rolls and sashimis!! However I would have liked a brief explanation of the components of each dish. Looking forward for the next visit!!!"

  • "This is the perfect place if you need a sushi fix while in Vail. The food was excellent, service also very good and attentive. The only critique I have is once again that tables for two tend to get squashed between larger groups, which makes for a very loud dining experience (especially if the larger group next to you has already consumed copious amounts of alcohol...). Recommend asking for a more private table to enjoy the chef's creations to the fullest."

  • "Absolutely the only place I will go to for special occasion meals and memorable evenings while in Beaver Creek. The food is a true Nobu experience and the staff is exceptional. While this restaurant grows in popularity each year, the staff has maintained a graciousness that keeps it down to earth even though the food is out of this world. We are so fortunate to have a Nobu experience here in Colorado and the views from Matsuisha match the beautiful presentations of food. This is not to be missed. Whether you are a visitor to Vail or lucky enough to call Vail home, a night at Matsuisha is a treat you will remember as a special night."

  • "Absolutely fantastic! We arrived a few minutes before our reservation and were greeted with a smile, the hostess said we could sit right away or enjoy a drink at the bar, I was surprised there were options as the restaurant was busy. We ordered around 10 dishes and shared everything. The food, cooked and raw was as good as any restaurant I've ever enjoyed. Between the server and support staff there were 5 or more staff members that came to the table and everyone was friendly and extremely knowledgable. We finished with a s'mores shaved ice that you have to see to believe. Great job Matsuhisa vail we hope to see you soon!"

  • "We went all out knowing we were getting into a very expensive dinner but left feeling the experience didn't match the price. I've not visited other well rated sushi restaurants in Vail but would try them first before returning to Matsuhisa. We explored a few of the plates including the hamachi with trufffles which fell flat. The amount of truffle was minuscule and wasn't enough to really impact the dish. The nigiri pieces were small enough that it seemed there wasn't enough to produce substantial flavor with the rice. Ask to sit a the sushi bar which is far more intimate than the main, large dining room."

  • "Food was good without a doubt. The price was extreme though and don't expect to be full when you leave. At one point we turned down both the $20/oz beef and the $40/oz beef. Be prepared to spend $250 or more for two people including wine and be neither full nor hungry when you leave."
