A word from Elevation
Elevation, the student operated restaurant at Cascade Culinary Institute (CCI), uniquely engages community diners as an integral part of the student learning experience. The Elevation menu, which changes two times per term, boasts of high quality ingredients that are sourced from regional growers, ranchers and producers. Patrons who dine in a "live classroom environment," are provided with an opportunity to offer feedback via an e-survey at the conclusion of the dining experience. Guest input is then integrated into the instructional process on a weekly basis in order to enhance the student learning process. As part of the CCI Capstone Course, learning outcomes within Elevation associate with students developing confidence in cooking and service techniques and developing effective communication and teamwork skills prior to their transition into the regional hospitality industry workforce as future leaders and innovators. We were quite surprised, as it had all the features of a very high end restaurant, with only moderate prices. As a training ground for culinary students, it was well supervised and we thoroughly enjoyed interacting with the staff. Standards were high, and it was quite a pleasant experience. Best dining in Bend in quite a while!"

  • "This is a culinary school restaurant and everyone tries hard to give you the best dining experience possible. The food is outstanding and the service is part of the course, so everyone is on their toes. I had the short ribs last night and they accommodated me by substituting the broccolini for their wonderful brussel sprouts...The potato side dish was equally excellent. But the pride of the evening was the goat cheese cake with the berry topping......YUM..Wonderful texture and flavor...Bravo"

  • "This is just the second time I have been to the new restaurant location, and it is much easier to get to. My first lunch there was nicely done, but at my most recent visit the grilled steelhead was superb. Our party of four all ordered and enjoyed it. We liked the chocolate bomb we had for dessert too. It was sad, however, to see the place almost empty at lunch; so we are already telling friends about it and suggesting they give it a try."

  • "This restaurant is operated by culinary students and part of their training. Wait don't let that turn you off! The food is excellent, both in quality and design. The servers, also students, are also very attentive. Since we live close we often take out of town guests here for a unique experience and quality food. Very nice."

Ask them where they want to go next as you might want to follow them! If you love chocolate, you will love the signature volcano. Dress up and go out to this beautifully designed building that is the gold standard in sustainability."

  • "We are a group of ladies who go to lunch once a month. We have some very picky eaters and yet we all agreed to come back when the term and menu changes! Usually we go back to a place only after a year has passed - if at all. While the menu was short, there was something for everyone. This is a restaurant where you spend a long time enjoying the food. The chef will Come to the table to explain how something was fixed. While it is a training facility, everything was top notch."

  • "student run service- most students are not in this restaurant with the focus of service but are required to serve for a couple of weeks for the program. More emphasis should be in training the students in service. Our server did not know some of the details about the food, and the wine service was not good. Our server broke the cork and had his hands all over the top of the bottle while trying to open it. It was gross."

The last time we were at the new sight we did not have as good of an experience as we were used to but this time was outstanding. The food was delicious, special and well presented. The view of the snow outside was gorgeous. Our only complaint was that the fireplace is not warm!"

Food was great (portions smaller but then none of us needed the extra calories!) and the best was the flavor of the chicken (It looked like plain friend chicken but tasted way better) and the chocolate bomb desert.   • "My wife and I finally got to check this place out on the last night of their season. We were greeted right away at the door, as well as had our coats checked and seated almost immediately. The chefs try to incorporate only local/seasonal ingredients and the quality shines through. Portion sizes are smaller, but they bring out delicious fresh bread if you go in exceptionally hungry. The atmosphere was quiet and my water glass never ran dry. We are looking forward to see what the menu brings next season."

The staff have always been accommodating to kids and are prepared with knowledge about the menu, beverage pairings, and ingredient origins. Reservations are not required, but recommended especially for groups."

  • "Delicious meal: Salad and soup are fantastic, steak and fettuccini also. But fettuccini portion is rather small for the price. Our request to split the bill per couple was overlooked but later corrected. We recommended eating at Elevation, but it is pricy for our standards."

  • "Being near the end of the term and the present menu,we were expecting more professionalism and better quality of food.We were served mussels that had never opened-a mediocre salad and a steak that was so so. The servers could of had more knowledge of the menu especially. since there were only 4 or 5 choices. Desert selection was just 2 which didn't entice us to try. Our bill was $82.00 with tip- we think the college should kick it up a notch and try stepping out of the comfort zone."
