A word from Elevation
Elevation, the student operated restaurant at Cascade Culinary Institute (CCI), uniquely engages community diners as an integral part of the student learning experience. The Elevation menu, which changes two times per term, boasts of high quality ingredients that are sourced from regional growers, ranchers and producers. Patrons who dine in a "live classroom environment," are provided with an opportunity to offer feedback via an e-survey at the conclusion of the dining experience. Guest input is then integrated into the instructional process on a weekly basis in order to enhance the student learning process. As part of the CCI Capstone Course, learning outcomes within Elevation associate with students developing confidence in cooking and service techniques and developing effective communication and teamwork skills prior to their transition into the regional hospitality industry workforce as future leaders and innovators. They accommodated my special request (via Open Table) to have champagne chilled and ready at the table upon our arrival (it was an anniversary dinner). Service was friendly and knowledgeable, especially for student culinarians. Knowing we were celebrating a special occasion, they put together a trio of the current desserts for us to share.   • "The quality of the lamb was disappointing...too much fat, gristle. The potato accompaniment was under seasoned. The mint sauce was too sweet and had already swirled everywhere, so even though I didn't like it, I was stuck with it. My guests enjoyed their salmon and lasagna. The lasagna looked really interesting. Service was terrific and our tip showed it."

I love that the restaurant is a "learning ground" for new chefs, restaurant managers, wait staff, etc. There were some holes in service but nothing huge and our food was not great but very tasty. These young folks are there to learn the business and we knew that going in. The salmon was very undercooked but still tasted good. My husband did not want to send it back as he thought maybe it was supposed to be nearly raw. My lamb was good though. The chocolate cake dessert was OK as well. The appetizer plate of cheeses and meats was very good. We will definitely go back as we liked talking with the staff and their future plans and they were all very enjoyable."

Wine was "OK" but prices were too high for the quality of the wine and fills were not at all generous. All in all, we remember back to lunches at the old venue which we enjoyed much more. I appreciate that the students may be getting a better overall experience and that is certainly a positive for looking to become a part of a commercial venture. "

  • "Elevation is a restaurant where the chefs and the servers are all culinary students (the maître d is an instructor). The servers are charming and helpful and the food is simply divine. There is a nice wine list (though I couldn't partake--work related, alas), and the desserts are scrumptious (I wish I could have ordered a lemon tart to bring home). There is a set menu so students can practice their culinary skills each night, perfecting each meal, and trust me: the meals are perfect (I adored my salmon, bok choy, rice and a smattering of coconut sauce; the spring salad with fried goat cheese is also delicious). Highly recommend this restaurant!"

The food is outstanding and the service is part of the course, so everyone is on their toes. I had the short ribs last night and they accommodated me by substituting the broccolini for their wonderful brussel sprouts...The potato side dish was equally excellent. But the pride of the evening was the goat cheese cake with the berry topping......YUM..Wonderful texture and flavor...Bravo"

We were quite surprised, as it had all the features of a very high end restaurant, with only moderate prices. As a training ground for culinary students, it was well supervised and we thoroughly enjoyed interacting with the staff. Standards were high, and it was quite a pleasant experience. Best dining in Bend in quite a while!"

My first lunch there was nicely done, but at my most recent visit the grilled steelhead was superb. Our party of four all ordered and enjoyed it. We liked the chocolate bomb we had for dessert too. It was sad, however, to see the place almost empty at lunch; so we are already telling friends about it and suggesting they give it a try."

  • "We are a group of ladies who go to lunch once a month. We have some very picky eaters and yet we all agreed to come back when the term and menu changes! Usually we go back to a place only after a year has passed - if at all. While the menu was short, there was something for everyone. This is a restaurant where you spend a long time enjoying the food. The chef will Come to the table to explain how something was fixed. While it is a training facility, everything was top notch."

Here, the customer is the guinea pig, but what a great way to be fed gourmet food .... by eager culinary students who are advised (and they follow the advice) to prepare exceptional meals. Their future careers are being tested and they surpass the requirements. We found this place by accident but our (many) returns will be very much on purpose."
