include an a la carte and 4 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Celebrating my husbands birthday with our kids and his dad visiting from out of town. From start to finish everything was exceptional, enjoyed the wine that James suggested, along with wonderful entrees. Food and service always meet our expectations and to top of the evening the kitchen made my husband his own dairy-free dessert that was so good. We look forward to many more great nights at Chimney Park.

Having dined at Chimney Park on several occasions, we prefer to order the Chef's Tasting Menu and the meals never disappoint. The worst I can say is that one of the desserts did not measure up to the other.
We have dined at world famous chefs' restaurants over the years, and the meals at Chimney Park would fit right in on most any of their menus.

We took a group of six, and we experienced one of the best meals we've ever had. Our appetizers were the ricotta stuffed gnudi and the apple bacon seared foie gras--both outstanding. My beet salad was one of the best I've ever eaten--full of a variety of flavors. We then split the bison special, which was served on a squash base with mushrooms and finished with a wine reduction--truly one of the most memorable dishes we've ever eaten at Chimney Park, and one of the best main courses we've experienced anywhere. Maia was very helpful as our server, James is a great mixologist, and then the chef and owner himself, Jason, came out to personally greet us and talk with us after our meal. Our guests were very impressed!

I'll be going here for all the special occasions, the Chef's pick is the way to go for dinner and the wine pairing takes all the guess work out of which wine to order for novices like me. The waiter was extremely knowledgable on the wines and food the was brought to us as well as he was super friendly.

We have been to Chimney Park several times and it continues to be one of our favorites. It is a small, intimate restaurant with great food and a killer wine list. The menu and nightly specials are not what you would expect to find in the somewhat rural town of Windsor. This rating is a little below what we have experienced in the past since the bison hanger steak was slightly underdone based on our order of medium rare (it was sent back to the kitchen and returned quickly with no questions asked) and our waiter seemed to be relatively new and a little uncertain. The sommelier is very good and you can trust his opinion for pairings and quality.
