In the beginning there has been one word in Carlos’ Bistro, Beautiful. The excellence and the experience of the best in Colorado Springs. Carlos (Owner, Executive Chef, and Matradee) provides a warm and welcoming experience to all of our customers, making everyone feel special at home and relaxed.

We are proud to now offer Japanese kobe and wagyu steaks plus burgers and kobe sausages made with kobe, wagyu, and prime meats at Carlos' Bistro as the state of Colorado is now a member of the Japanese Kobe Club.

    Amazing dining experience! We were greeted by Carlos and his staff immediately. The ambiance was stellar. The food was exceptional. We could tell there were many regulars there. We will be going back. The whole experience was superb. Thank you!!!

    This restaurant is very warm and inviting, and the staff is amazing. So attentive and friendly, they all ask every guests name and use it throughout the evening. The entrees are excellent and priced fairly. The martinis and wine pours are generous. The wedge salad was beautifully presented, just a little overdressed. Crème brûlée was excellent. A very romantic dining experience.

    Great experience last night for a birthday dinner. Carlos himself literally greeted us in the parking lot and walked us to our table. Everyone was inviting, knowledgeable, and professional. Yes, it is pricey…but you get what you pay for! They are now in my top 3 favorite restaurants in the Springs! 10/10…highly recommend!

    Wagu kobe beef superb but expensive.lobster bisque fabulous but also expensive. Total cost of meal for one was $830

    Outstanding restaurant. No other place has the personal service that CarlosBistro provides. Best food in Colorado, easily!! Make your reservation and go - a will be very happy you did!

    From the moment we pulled into the parking lot until we walked out the door it felt like we were having dinner with family. The atmosphere is warm and inviting and the food is outstanding. As soon as Carlos learned our names he used them until we left. You could not ask for a more intimate dining experience. It was obvious that Carlos put his heart and soul into every aspect of the wonderful restaurant. He makes everyone feel special. If you are looking for the best in Colorado Springs, you have to try Carlos Bistro. I would rate it 10 out of 10 with no exceptions!!!

    This place is a hidden gem. I did not expect leaving there saying WOW. The service is impeccable. Carlos greeted us right when we walked in, and was so helpful throughout the evening. Stephanie our waitress was fantastic. The food was phenomenal. Every bite, I couldn’t believe how good it was. The drinks were recommended to us and did not disappoint how tasty they were. My husband and I left there saying what a great experience it was, and we would absolutely come back.

    Carlos is super friendly and engaging. Our waitress was absolutely lovely and friendly. They called my husband and me by our first names and congratulated us on our wedding anniversary. Their personal touches did not go unnoticed. The food was outstanding!!! I haven't had such a wonderful mean in a very long time. Drinks were unique and tasty. Everything was wonderful and made our anniversary dinner extra special. Can't wait to go back!!

    A wonderful find thanks to Open Table. We had a free night while visiting Colorado Springs and had an amazing meal at Carlo’s Bistro. Great food, wine list and signature cocktails. Don’t miss out on this place when you are in the Springs.
