We normally get our filets butterfly-cut because we find the chefs have an easier time getting the consistent temperature we prefer throughout. Chophouse assured us they could do it without the butterfly, and they were cooked to absolute perfection! As if a perfectly cooked filet wasn't enough, we also ordered the potatoes that were smashed and cooked in beef tallow with a mushroom-based dipping sauce. The beef tallow made its way into the skins and the potatoes and gave them a crispness and flavor that was out of this world. Easily the best potatoes I've ever had in my life. Please commend Chef Derrin and his staff for their superb meals, serving staff and presentation. The menu has changed, which is a good thing, but I was so disappointed the 'Fish Fry' had been replaced with 'Fish & Chips'. I truly missed the former battered Fish and Prawns and the way the fries were served in their own cute basket with all the sauces.
