    Came in before the Caps game on Monday 5/9 to grab dinner with the group of six - had a reservation but restaurant was completely unprepared and acted like they were doing us a favor sitting us in the bar with no waiter/waitress service - we figured it out and I could understand if we just walked in but that’s why we got reservations. Food was good and on par with expectations service was not for a restaurant of that caliber and cost. I am not saying I won’t come back but less than impressed with that evolution.

    People had OT reservations for 11, 11:15, and 11:30. We arrived at 11 for our 11:15. Sign outside door said they open at 12. Door was open where we found the large 11 reservation group. The host said they didn’t plan to open until 11:30 and was surprised we all had OT reservations. He said they haven’t used OT for almost 3 years and they get no reservation feeds from OT. As long as I’ve been going to eat downtown, Hill Country has been available in OT. Despite the mess, they sat all of us at 11:25, opened the line at 11:35, and managed to feed everyone. We got out in under an hour and made it to the hockey game. Good on them for making up the slack, but they appear to have a problem. Recommend calling ahead to make sure they see your OT reservation.

    It pains me to give a review like this. Have been going to this place for a while now, but this really stings. Had a OT reservation but originally staff could not find my reservation. Was placed at a high top in the bar area. Server never came to the table, so I gave up waiting and just went to the back to get my food (a person that is a first timer would not know where to go). During this time others tried taking my table not once but twice. Again the server never came to the table and had to chase down my utensils for myself and another table that was having the same problem. Still no sever and had to chase down my own drink. Sorry, but being busy is no excuse for lack of service. Food was excellent, but they can do better than this.

    We ate at Hill Country prior to a Capitals game, so the restaurant was full. With an understanding that restaurants are understaffed due to general staffing shortages, there was one server for too many tables and he was working hard, but was unable to perform his duties without keeping everyone waiting. The time it took to be seated was equally as frustrating as there was only one person checking patrons in and seating patrons. We go to Hill Country for the meat and the brisket, which was supposed to be moist, was dry and not anywhere as good as we have experienced in the past. At $36 per pound, it was very disappointing. As many times as we have dines at Hill Country the past several years, we will most likely choose a differenct restaurant in Penn Quarter in the future.

    After sending me several reconfirmations about my reservation, I showed up to find the restaurant closed for the night and my reservation unfulfilled. I would have appreciated better communication about this. Even the next day, there was no acknowledgement of this problem. Weird! Luckily every other restaurant in Penn Q was open and I got a table elsewhere.

    I stand in line for about 15 minutes waiting just like everyone else. Everyone else is asked if they have a reservation or how many they have in their party. I am asked if I'm "uber eats pick-up?" I found this to be the most rude way I've ever been greeted at a restaurant, period. The social unawareness of the guy who pulled himself from the bar to ask me that, when there were two hostesses working on table management is just the most hilarious thing I've experienced aside from their poor service and inability to function with simple tasks in this establishment. After letting him know that his assumptions weren't welcome I told him I had a reservation for 4 people and he was unable to help with that, so I'm not sure why he came over to 'help' in the first place.

    As always, food was outstanding. Not sure why when the restaurant is packed with CAPS fans there is only one person pulling meat out of the bins and one other person preparing the food.

    Delicious BBQ and overall fun , casual , and friendly environment. Place is great for families, work , larger groups - all around fun and great food . This is my second time here and each was a nice experience . Food servers and wait staff were all friendly and welcoming.

    Sister’s birthday lunch. Was my first time dining there. Loved the moist brisket. Was surprised they don’t serve coffee. Would’ve gone nicely with our pecan pie. Very small pie but very good! It’s really much more self-service than I expected and that was fine. You won’t get the familiar ‘waiter stops by to see if you need anything’ dining experience. You’re on your own. Everyone was friendly but if you need something, you better go get it 😊

    Went mainly for the entertainment. Music and song by a Austin TX singer/songwriter Slaid Cleaves. Food was cafeteria style.

    Normally (pre-pandemic), Hill Country was one of my favorite restaurants with amazing food and great energy. It just didn't stack up last night. BBQ was not generous, food was room temp--not hot, staff all seemed annoyed to be there--not a smile in the place. With very few patrons, there was no energy; rather it just felt sad. I don't know if I'd go back and certainly wouldn't make a special trip downtown for Hill Country if this is the new norm.

    You get your food cafeteria style, pay for it, and take it back to your table. I had pulled pork and my husband had brisket. Both were excellent.

    It’s all self serve now. You get your own drinks, limited menu from before. You don’t get a food card as before and pay after you stand in line, can’t go back and only pay once. No wait staff.

    Food is excellent! Especially the brisket and pulled pork. The sides were ok, but not great. This is a counter service restaurant so once we sat down we were pretty well ignored. That means I had to ask for water from 3 different people and we had to keep our cafeteria trays on the table throughout the meal. If I were to go back, I’d probably just order meat to go.

    This restaurant has been rated the best barbecue in DC and I won't argue with that. The meats are prepared exactly like they're supposed to be, the short rib being the best I've had. Sides are also delicious. I'll go back whenever we're in the area.

    We were VERY disappointed by a misleading menu item: German potato salad was listed under hot side dishes, but what we got was a cold, overly mayonnaised, standard American potato salad. And there was no waiter to complain to, since you have to order and pay at the counter and then pick up your food. The pulled pork and the baked beans were good, but didn’t make up for the potato salad.

    Due to the ongoing pandemic, Hill Country was virtually empty -- a condition I'd never seen there before. The food, as always, was excellent (I had the brisket sandwich and cucumber-salad side), and the covid accommodations seemed wholly appropriate. It was good to get back to this wonderful BBQ after 18 months!

    I loved this place. They have a meat market in the back that you can order what you want or sit near the bar and be served. I’m from the Texas Hill Country and think the quality was right up there with other bbq that I’ve had back home. Highly recommend.

    Always enjoy Hill Country Barbecue. They bring a taste of Texas to the Nation's Capital. The varieties of barbecue are outstanding and the sides taste like home. Hill Country also offer Shiners Boc and Big Red - Texas favorites. I wish they still had Blue Bell ice cream.

    First time visit - The food was EXCEPTIONAL - very flavorful and fresh. Service was good and quick. Overall restaurant was quiet and we were able to enjoy dinner as well as have good conversation. Would definitely recommend to others! :)

    My parents were visiting from out of town. We had a booking for 2:00. Arrived early about 1:50. By the time we sat down, ordered, and had the food, it was 2:15. A server came over and said, “I am not rushing you, but you have to leave by 2:30. We are closing for a private event.” They pushed us out. Rude and unreasonable. If you are closing at 2:30, don’t take reservations for 2:00.
