Coco Bolos has a newish menu. Old favorites are still on there, but there are some new additions and more cocktail choices. It seemed like service and quality had started to slip the last few times we have been there, but we were pleased to see that things have improved. We really love this place. It’s great to see them thriving again.

My friend and I visited CocoBolos on a Thursday night during restaurant week. First red flag: CocoBolos was the ONLY Mexican restaurant taking reservations. During restaurant week. In Prairie Fire. But... they had 4.5 stars on OpenTable and 4.1 on Google, so we gave them the benefit of the doubt. The food was unremarkable. The fajitas were badly overcooked and very tough. The veggies were cooked to mush. The rice and beans were meh. For $17.95, fajitas should be very good. Not unremarkable and certainly not meh.

We love Coco Bolos and miss ours in Manhattan KS. Bacon wrapped BB shrimp with coconut rice and veggies is a yummy dish. But have to get the Trainwreck especially on a cold day! Good sangrias, too!

Food was barely warm and was ok, but just ok. The margaritas were made with cheap tequila and an upgrade was not even offered. Our server was friendly and adorable.
