J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

Please reach out to our reservationist for private dining.
We offer Valet at $12 daily

    Our evening at J Carver’s was amazing! We had an issue and were running late, but Jessica, the hostess was so gracious and understanding. Our food was absolutely delicious and the service was great. I highly recommend J Carver’s

    Great food and service. Jesse is outstanding and the best bar manager in Austin and she makes a perfect Old Fashioned.

    Always a pleasure- the entire team does a fantastic job, food is excellent and service is impeccable. True pros all doing great teamwork creating a wonderful experience- they understand the full and true meaning of hospitality.

    Everybody told us how great J Carvers is so we were excited to try it. We sat at the oyster bar and the bartender was very nice and helpful. The oysters we had were good. The halibut crudo was very fishy. The Cesar salad was nothing special. The steak for two was cooked to a perfect medium rare and had great flavor. I would compare J Carvers to Eddie V’s. But Overall I would pick Eddie V’s for dinner.

    I love J Carvers. Food and service is great. Greeted at the door with a handshake and "welcome back". May be the best oysters in town. Always perfectly fresh and cold. Keep up the quality and I'll be coming back for a long, long time.

    Bar none the BEST restaurant in Austin. John Carver knows what he’s doing. Attention to the tiniest detail ( your name in a frame at your table, white napkins for those of us wearing white pants, every order always as specified, and delicious food and drinks).
