Each spring/summer season, the buck's velvet supplies developing antlers with vital nutrients and oxygen required for a rapid regeneration and growth before the antlers are shed in the winter.
The elegantly raw evolution of the Buck metaphorically translates into the story of the rustically refined men that developed the Mountains and Aspen in the early 1800's.
Excellent food, very good service, but the dinning room was quiet, we didn’t feel in Aspen, or a mountain village.

Beautiful cocktails to start, the color-changing G&T was a cute highlight. We shared several appetizers, and two entrees as a group of three. The food was delicious and beautifully executed. Our server did a fine job, she seemed a little hesitant, but was pleasant. Very quiet dinner ambiance (Apres may be more their thing?) but the quality of food did not suffer from a very empty (beautifully decorated) dining room. Glad to have finally tried out the Velvet Buck, and will come back.
The food was delicious and creative. We brought our children and the children’s menu was varied and included smaller portions of salmon and steak. Our waitress was extremely helpful and brought tableside s’mores to the kids for dinner.

Honestly if I could give SIX STARS for service, the staff at Velvet Buck deserve ⭐️⭐️⭐️⭐️⭐️⭐️ — Food was delicious as well. My St. Regis G&T was strong but fine still, worth the $.
Love this restaurant! The staff is always amazing, professional and friendly and the food is five-star. I love how they switch up their menu throughout different seasons as well. Great ambiance that is a quiet and comfortable for long evening of conversations.

The restaurant was empty. For Aspen this is a real indication of how mediocre the restaurant is. All other restaurants we went to on this 4 day trip were packed.
The menu is limited. Salmon was the only fish choice on the menu and I was told it was from New Zealand. What happened to Colorado bass or trout? Something more local. We had what they called a homemade pasta that was swimming in fat. The Mac n cheese tasted like cheese whiz and had no crusty parts.
The staff however is very friendly and works hard to please.
Service was very slow. Drinks did not gone out with food. A few items where forgotten. Food was good though.
New Years overpriced, especially when the price includes all you can drink champagne but you have 17-year-olds sitting at the table who cannot drink. There should be a price difference for those up to 21
Celebrated New Years Eve with my husband, food and service were good, good atmosphere, has gotten a little bit hectic after dinner, while transitioning to the after dinner party, but overall great experience, fun night!
Overpriced for the food they offer
I made the reservations two weeks prior to dining, upon arriving we will put in a table in a bag overflow area, I asked to switch tables and we were eventually moved toward the main dining room. We were rushed to make our dinner decision then it took almost an hour to receive our food! Food was tasty but I feel as though they strung out delivering an order for us to order more Cocktails. I expected a little more on Amviance from St Regis honestly.
Our server was extremely personable and helpful. The 2 salads we ordered were the worst I have ever had. The salmon medium. WAY over priced for the quality.
Heavy overpriced for value delivered. Food was cold, service close to not existing - long time no show up. For the price we paid, we have expected more.
Positive is the wine list - well sorted.

Food good, but very expensive. A little disappointed in service as I had to request water a couple of times. The manager stopped by our table and he was very friendly and interested in our dining experience. We will come again.
Thanks giving meal. Only teeny tiny pies the size of your thumbnail. The filling was great. The turkey and ribeye was amazing! Downhill from there. The ambiance was great and so was the service. No stuffing!!! They had one dish they called stuffing but had sliced apples or pears and wasn’t stuffing. Won’t eat here again.
We had an exceptional meal with terrific service. Three of us went and all of us were more than pleased. When we first walked in we were a little worried because there were
so few other diners but the service was so good without being overbearing that we soon ceased to notice who else was or wasn’t around. My only suggestion would be to change the name. Velvet Buck sounds like something out of the 80s for a restaurant with food that is very today!
Food and service is exceptional. One of the best filet mignons we have ever had. So delicious, in fact, my 13 year old son had it three days in a row.
It's a real hidden gem in Aspen - tucked inside the St. Regis - valet parking, wonderful wine list, and delicious food, and never a wait list - don't fight for parking and a table someplace else - give this place a try!
Had a great experience . Service was outstanding! Very personable and knowledgeable. Ended up taking hiking trails and food. Love music was great.
We ate dinner at the Velvet Buck last night with 5 of our closest friends. The food and service were phenomenal. Our waiter, Jonathan, was on his game with amazing wine suggestions, and great service. It may be one of the best meals I’ve had in a town where food is king. At our table the salmon, bass, short rib, chicken and duck were ordered and each person felt they had the best version of that meal. I had the pea soup appetizer that was amazing and the carrot cake at the end of the meal was one of the top 2 carrot cakes I’ve ever had. We almost cancelled because some reviews had it being quite there but are very happy we did not.
The restaurant was empty. The prices were very high and there were no sides included with the order. In a Friday night in aspen it was strange no one was there. Perhaps it’s the mediocre food snd high prices.
Service was great and server was lovely and could not have been more accommodating however other than steak and fries, all other dishes for lunch were mediocre at best, in particular lobster mac & cheese. Fish tacos were overstuffed and bland. Kale salad dressing also bland.
We skipped dessert but that menu looked fantastic, and the gluten free corn muffins to start were excellent.
Though prices are steep, portions are huge.

We’ve eaten everywhere in Aspen and in my opinion this is one of the best restaurants in the city. We received excellent service from the entire staff, and especially from our server John. The kitchen was very accommodating of food sensitivities. The food was delicious (highly recommend the bison steak) & the menu is appropriate regional fare - the kind of food I want to eat when I’m in the mountains. Great drink program with some very rare spirits, unique cocktail list, and large wine selection. Check it out, you won’t be disappointed.
Converted old ballroom in the st Regis. You can even still see the buffet bar. Service was mediocre. Food was subpar. Overall - not worth the price.
The service was so bad !!! One person in our group never even got their meal. So many huge missteps from the staff. Would not return!
Horrible service. We didn’t have a server the entire meal. Breakfast buffet was good but had to keep putting our empty plates on the table next to us because service was so poor.
This sadly felt every bit like a hotel restaurant. Food was good but the overall experience doesn't hold a candle to other Aspen hot spots.
Would not recommend. The service is the slowest I’ve ever experienced in my life. Our group of 10 sat down at 7 and our food didn’t come until 8:30. Absolutely unacceptable. Way overpriced for the lack of attention to customers.

The food was excellent. The bone in ribeye for two fed four easily. The pumpkin entree was delicious. We also really enjoyed the red velvet and s’mores desserts.
The food was very, very good — the meat (Bison & NY Strip) was prepared to perfection. And, the side of Mac & Cheese exceeded expectations.
The space is lovely — high-end casual elegance. And, the service was prompt and attentive.
The wine list features a good selection — from “reasonably priced” bottles to more select labels.
