1st Course (Appetizer)

Crab Ravigote
Sweet creole ravigote, jumbo lump crabmeat, chives, fried shallots, paprika oil, and baby greens. Finished with an okra satsuma relish.
Oyster Artichoke Bisque
Silky smooth bisque finished with fried artichoke hearts, oyster en croute, and lemon chive oil
Pickled Shrimp Terrine
Chilled boiled Louisiana shrimp tossed in candied mustard seeds and finished with a pickled beet salad. Served with baguette toast points.
Charred Oysters
Crème fraîche lemon cream, orange zest, and pepper jelly. Topped with a charred green onion gremolata.
2nd Course (Entrée)

Smoked Hanger Steak
Brown butter reverse-seared Flat Iron steak with smoked tomato okra, fried sweet potato shreds, and a blackberry demi glace.
Speckled Trout
Louisiana speckled trout served with roasted asparagus and satsuma jam-glazed sweet potatoes.
Chicken Pontalba
Airline chicken breast with tasso ham, mushrooms, and fingerling potatoes. Drizzled with béarnaise sauce.
3rd Course (Dessert)

Fried strawberry hand pie with clove sugar, rosé strawberry sauce, and bruléed marshmallow
Crème Brûlée
Traditional style with torched turbinado brown sugar. Mmm.
