Best Resturant in Palm Springs! The food was phenomenal I could decide what was my favorite. You have to try everything from the small plates. Our waitress was amazing. You won’t regret coming.

This was one of the best dining experiences we’ve had in the desert - and we’ve lived here for 20 years. Our server Miguel set the stage when he greeted us and said we were going to have a great time together. We started with each of our party trying a different margarita and they were all beautiful and tasty. We decided to share an assortment of dishes from throughout the menu and each one was visually stunning and equally delicious. Standouts were the octopus, both salads and the yucca crème brûlée. At Miguel’s recommendation we had the jewel box and the flan for dessert. The jewel box was so fun and delicious. We have been to several Michelin star restaurants and the best restaurants the desert has to offer and Tia Carmen stands strongly with them. The restaurant is very attractive and the seating is comfortable and spaced appropriately. The staff was attentive and provided outstanding service. We received a new set of cutlery and the crumbs were removed with every course which I greatly appreciate. It’s that level of service that is equally important as the food and what sets a restaurant like Tia Carmen apart. If I had any notes, the only one would be that it is unfortunate that the restaurant is housed at the Hyatt, where they charge $15 to valet park (charging for parking for a restaurant is practically unheard of in the desert) and the crowds of families s d children running around in the lobby. But once you make it through the gauntlet, the sanctuary of Tia Carmen promises an unforgettable experience. We can’t wait to go back and lucky for us we live five minutes away.

✨ A Culinary Love Letter to Tia Carmen ✨ We had an absolutely phenomenal experience at Tia Carmen—everything from the service to the flavors was five-star and then some. Nestled inside the Grand Hyatt in Indian Wells, this spot feels like a hidden gem that’s already shining bright. Every single dish we ordered was mind-blowing—and I don’t say that lightly. From the perfectly crisp pan frito to the fresh and flavorful romaine salad, each bite was a masterclass in balance and creativity. The roasted purple yams were a surprising standout (seriously, I’d go back just for those), and the market fish a’ la plancha (we had the halibut) was delicate and divine—perfectly paired with a crisp glass of Sancerre. The Tia Carmen burger brought bold flavor, especially when enjoyed alongside the smoky Mesquite “Gunslinger” and Century of Passion cocktails—both delicious in their own right. And just when we thought it couldn’t get better, dessert arrived: the flan Manchego cheese, beautifully complemented by a glass of Moscato, was the perfect finale. Special thanks to our server Rachel, who was warm, attentive, and made the experience seamless. Chef Miguel even stopped by our table to say hello and thank us for coming—a lovely and personal touch. He generously sent over a complimentary glass of wine to pair with our dessert, which was the cherry on top of an already unforgettable evening. Tia Carmen isn’t just a restaurant—it’s an experience. And one we’ll be dreaming about until we return. 🍷✨

I was looking forward to dining there because few of my friends rave about how good the food was. The ingredients were all excellent, but every dish, except for meat was all so salty, we had to send back the main Mushroom pasta I heard that was excellent. We told them we couldn’t eat it, so they brought the fish, which was fresh and very well cooked, but what it was served on was again salty. My friend and I were disappointed, and couldn’t grasp why it was so salty tasting. I have no issues with salt on my food and never have. I can tell it had all the elements of high quality food, but couldn’t get over the how salty it was. I really do hope they can correct this problem, so I could try it again. I had asked my friends who dine there, and they said it wasn’t what they experienced. Sorry I hate to write this review, but I really hope to go back and try it again.

Miguel was a fantastic waiter, attended to us very well and often. The complimentary glass of bubbles upon arrival was a great touch for our birthday celebration!

Server was great, her recommendations were on point. Tomahawk was very flavorful and a perfect sharing portion. Drinks were delicious, the Unforgiven and Bad & Beautiful were my favorites. Overall great environment & I’ll definitely be coming back!
