   We were a group of 6 who booked this restaurant weeks before for a special event. On the morning of the booking I called to make sure everything was as planned and requested for the booking wanting the evening to go smoothly. I was told that my request would be met and all was fine. On arrival we went upstairs to the rooftop bar as we were early,waited over 30 minutes for our drinks,they didn’t arrive. Arrived at the restaurant and taken to a table that was right in the middle of the floor next to the service area. My request was simple quiet table near the window not stuck out in the centre of the meal service area.( This table was later removed) This was rectified by the manager after a discussion with staff. Embarrassing in front of my guests. We did have a delightful waitress Yuri who did her best to make our evening enjoyable. The food was not really to the standard expected as a lot of the seafood run out and was not replaced and the hot food really poor choice. Not at all what you would expect from a Hyatt.

   Food was really great. Awesome service. It was value for money. Seafood was fresh. Ambiance was good. In general, I would highly recommend dining with my friends next time.

   Since my last visit the service has improved 100%!! The seafood is delicious especially the fish which is amazingly tasty and moist. My friend & I were pleasantly surprised. I'll be back for sure!

   If you are a seafood person I recommended!! It doesn’t worth your money but other line foods didn't have much choice. Stuff so nice such a good memory.

   The table at the window was nice with distant views of Darling Harbour. There is plenty of space between the tables that avoids people bumping into the back of your chair. Due to that space the noise level was quite low and a conversation was easy. It was our second time at Sailmaker and there was a marked downgrading of the variety of food. The vegetables offered were to clever in the mixture of flavours. Why do beans need other things mixed in. The salad choice was also limited. The serving of the whole Barramundi was spectacular but the fish was overcooked to mush. And so was the second fish! There are other hotel seafood buffets in town that are a little bit more expensive but give far better food and service.

   The food was nice and a good variety, I had to chase down a waiter to get table service for wine as no one was checking on us or asking if we needed anything. It was a nice quiet place and easy to talk, and yes I would consider coming back as I enjoyed the food and wine. The beer at the cocktail bar in front was abit high price though.

   the staff was very accomodating and the service from our matradee was outstanding, i booked for a normal table instead of high tea and they sorted it for us in a very professional and timely manner, outstanding food and service, will be returning.
