Everything at The Establishment begins with well-sourced ingredients from sea and field. Through developing relationships with local farmers and fishermen, our ingredients will be consistently seasonal, fresh, and pure. Chef Elliott Howells' menu will always reflect a clean, focused, and balanced approach, delivering a selection of thoughtful and refined cuisine.

Located in Charleston’s historic French Quarter a few blocks away from Rainbow Row, Charleston City Market, and Waterfront Park, The Establishment features an award-winning wine cellar, over 150 bourbon and whiskey offerings, and a lively bar scene complete with daily happy hour. We feature Live Music every Friday and Saturday starting at 8:00 PM, featuring multiple local artists performing an array of musical genres. Our private dining rooms are perfect for birthdays, anniversaries, graduations, or business meetings. We look forward to hosting you for a casual night out or an elevated dining experience.

Every course presents a signature cocktail that showcases the spirit’s complexity, and a spirit sidecar served neat, for a pure tasting experience. Paired with dishes that celebrate authenticity of local Mexican cuisine, adding a little spice to your evening. Guests will be guided through the tasting by spirits experts, sharing the story behind each spirit–its origin, distillation process, unique anecdotes, and tasting notes. Second time back and just as great as prior experience. Menu offerings, presentation and flavour truly wonderful. Nathan our server was a delight.

Service was quite slow, scallops were luke warm, kithen refused to accommodate a substitution due to allergy, and noise level was so high to prevent normal dinner conversation.

Wonderful food! Impeccable service! Our only criticism is it was noisy. We were there on a very busy weekend in Charleston…there were many loud revelers enjoying the evening. Certainly, we would return!

Establishment is always consistently creative, delicious and attentive. Every time we go we know we will try something new and discover an entirely new dish. They have consistency in the menu but they change up and explore new preparations with certain staple items like their whole fish. I look forward to seeing how the chef will interpret different cultural food styles. The vegetables are also unique, fresh and complement main entrees well. All staff are attentive and knowledgeable. We’re regular people but they make us feel special. Thank you!
