Time &; Temperature, “T&;T” is a dynamic and revolutionary new dining experience set behind the scenes of the JW Marriott Desert Springs Resort. T&T has no set menu yet offers an ever-changing five-course menu that is crafted each night by our chefs. Chefs host the entire affair, sharing and commenting on the art & style of each course.
The standard dinner is $105. per person and may vary depending on the menu or special events. The menu is subject to a 20% service charge, plus sales tax.
Please come to the Rockwood Grill greeter station upon check-in. All T&T guests are escorted from Rockwood Grill to the T&T Innovation Kitchen.
We are open Friday and Saturday for dinner service only. Special events will be announced on our Social Media sites.
When you make a reservation at T&T, it covers your base meal, but it does not include supplemental food, alcoholic beverages, non-alcoholic beverages, coffee or tea.

We celebrated our anniversary. It was one of our best food experience. The food was excellent and service was second to none. Everyone was very attentive. We would definitely return and would recommend to anyone who wants a dining experience to remember.

Unusual experience not to be missed for foodies or anyone that wants something special. Only 25 people permitted to reserve. I would go again in a heart beat. We (as well as many people there) were celebrating a birthday. They brought out a special dessert for the celebrant. We had the wine pairing. The chef-driven menu and wine pairing are both fairly priced.
My only issues were that the waiter kept forgetting to provide fresh silverware and at the end of the meal did not mention that there was a 20% gratuity already included in the total. As a result, I inadvertently overtipped. A good reminder to check the bill carefully.

Great experience, very unique experience. Exciting to try new and innovative foods. Highly recommend for those wanting an experience and willing to try new things. The only downside was a little pricey.

We found the restaurant atmosphere was not what we expected. Not a lot of people in the restaurant while we were there so it wasn’t what we were really looking forward to that particularly evening. There is six large tasting portions which we could only get thru 3 at most. Would of like to see a tasting menu smaller portions instead of a normal size dinner portion. Also we found the whole experience for what we had to eat and drink was extremely expensive.

We had a wonderful meal/experience at T&T and highly recommend for those looking for a special dinner in the desert. We were able to let them know beforehand what food we don’t eat so they made modifications to our menu and they were delicious. We were a party of four so we had two meals add the 6th course (lobster) and two add the wine pairing - both were the perfect amount for the four of us to share. Trish our mixologist was amazing and added so much to our experience - she was so personable and really took the time to get to know us + made wonderful cocktails. Overall the food, service and experience were fantastic.

The best culinary experience we have had so far. The staff is incredible knowledgeable, attentive and fun! The cocktails are creative and delicious, the bartender will come to your table and introduce you to the drink menu. We highly recommend the wine pairing, carefully selected to complement each dish of the night. When you make your reservation, ask to be seated at the "bar" from where you can watch the chef cooking and interact with him (I believe this option is available for parties of 2). The food is delicious and beautifully presented. We will definitely be back.

Just a few suggestions for future consideration....
....reduce slightly overall portion size! It was a lot of food!
.....allow input on how each diner would like their meat prepared ie...medium vs rare etc.
....provide a steak knife for the meat courses
....allow the lobster as a sustitute for one of the meat dishes if the diner prefers, at no extra charge.

Time and Temperature is truly a dining EXPERIENCE. This is for those who truly enjoy a Culinary experience. This is not about value dining or having a quick dinner. allow yourself at least 2 -3 hours to enjoy this food event. Highly recommend this restaurant, and dining evening. Food was amazing and service is exceptional. Enjoy

I love coming here. The food is excellent and innovative, and the set chef's menus is a delightful experience. Also the wine pairing is much improved and now worth recommending, and I'm especially happy to have a place like this here in the desert rather than having to drive to LA. I would not want to discourage anyone from making a reservation other than to make it easier for me to get a table.

But, as constructive criticism and only with the intent to help them get even better, I do think they should pay more attention to the pace of the experience. From the time you are seated, everything starts moving too quickly. There should be a chance to settle in, have a glass of something festive, look around you, relax, set the stage. At previous visits we were given a wine/cocktail list but the first course was down before we got our drinks. On this visit we were never even presented with the list. We sat there with bread and butter and ice water for some time, until shortly after the first course the first glass of wine from the pairing arrived. We did see others having cocktails or a full bottle at their table, so I'm sure they still have somethings beside the featured wine pairing. Then at the end of the experience, no offer of coffee or an after dinner drink. Just the desert wine from the pairing, and the check. Maybe they are worried about messing up the timing of the courses? I realize that they are on a schedule and have timed seatings but I've seen other restaurants with this same format make time for this.

Rockwood Grill - we arrived 45 minutes early for our T&T reservation planning to enjoy sitting by the firepit with a drink. After a few servers walked past with that carefully practiced 'don't make eye contact' trick that poorly managed servers perfect, my husband actually had to walk back into the bar to ask for service. 25 minutes passed before we were served. Shameful for service, and dereliction of duty for your profits.

So glad we made a reservation here. The food was fantastic (with bread and butter to die for), the drinks were really well-balance with a great wine selection as well, the service was top-notch, and being up close to watch the food preparation was really something.

This dinner was off the hook. Six course meal which we did with the wine pairing. Each course was great. The service was excellent. Everyone explained each course and wine. Chef Peter and his staff were fantastic. If you want a chef’s table experience, this is for you. Bring your wallet but worth the price,

This was an incredibly unique dining experience that should not be missed! The chef's are so creative and they take the time to meet and interact with you at dinner. I recommend pairing your meal with the wine as the wine deliciously compliments each tasty dish. And don't skimp, you've got to try the optional 6th course (ours was a lobster dish that was exquisite). This is by far the most unique and in my opinion the best dining experience in the Desert. If you can get a reservation go to T & T it's dynamite!

We had a great time there with friends, and admired the innovative cooking and the ambience that being in the kitchen provided. The personal touch of having the chefs come over and tell about their creations was lovely; and our server, Rebecca, was terrific. That said, it adds up fast with drinks and supplements and it is an overwhelming amount of rich food. The one complaint that everyone in our party of 6 had was that the food all arrived at room temperature. I know that part of the problem is the intricate plating that leaves the food sitting there cooling while that goes on - there is probably an easy fix for that.

My husband and I dined at T & T for New Year's Eve. It was absolutely phenomenal ! The menu included small portion courses, and every dish was unique, carefully prepared, and delicious. Each plate was beautifully presented by Chef Smith and his staff. We were fortunate to be seated at the Chef's table, so we were able to interact with the chef and his staff, while enjoying the food, drinks and watching the preparation of each dish. We also opted for the wine pairings with each dish and every glass was beautifully paired. What a fabulous way to spend New Year's Eve! Thank you Chef Smith and staff!

WOW! An experience that is so engaging & delicious you’ll be in a state of bliss. The entire staff is gregarious, fun, knowledgeable, & attentive. The show is great & the food is spectacular. This is THE PLACE for foodies in the Coachella Valley. Sophisticated & creative cuisine created and prepared by a talented team of chefs - as you watch it all unfold. We made a reservation to return before we finished our meal. Tasting menu with wine pairings - expect the unexpected! Expensive but well worth the price.

AMAZING!!! Chef was fantastic. Came to table to explain every dish, and each dish was better than the last. He even made a special bday cake for my moms 70th. The waitress was so attentive and kind. The mixologist was a genius. It was the BEST dining I’ve experienced in the valley. Go before the secret is out and you can’t get a table!

After you check in at the Rockwood Grill you are escorted through the massive Marriott kitchen to a private area that has been created just for this dining experience. The space has is modern, not stiff, yet appealing, ready for the food to take center stage. Great service starts immediately with an offer of wine or cocktails. We were told the set menu changes weekly. The five courses offered something for everyone! We were also able to add on wine pairing and an extra Lobster course (which I did ... lobster with truffles). Since it was just the two of us so we were able to sit at the bar in front of the chefs, really recommend because the chefs are engaging and excited about the plates they created. We were surprised by the sizable portions, the creativity and the artistry of each dish. All the courses were delicious and the pairings were perfect! Pricing? Well, ended up about the same as you would pay at a nice steak house ( ie. Morton’s, Mastro’s, Ruth Chris, etc). Check out my photos!

This was our first time at a chef’s table dinner and did not know exactly what to expect. This experience, while a little pricey, was awesome. Enjoyed every dish very much. Some dishes pushed us out of our food comfort zone, but they were all delicious. Would not have changed a thing. Lots of personal attention from the chef’s and waitresses. We were sitting about 10 feet from the stoves so we had a great view of the action. You don’t know ahead of time what you will be eating, but we had scallops followed by an octopus taco. The octopus may have been my favorite. Hard to decide. Next was a chicken dish followed by a lobster dish that was an add on. Very much worth the extra cost. Just do it. My wife is not a real fan of seafood and she ate every dish. The last protein was venison in a venison reduction sauce. Outstanding. Only problem I had was I was getting pretty full. Dessert was very good and a work of art at the same time. The food was great, but the real attraction is the experience. If you love food and enjoy cooking this experience is not one to miss.

It was the most amazing GASTRONOMIC EXPERIENCE! Dishes tingled all the senses - Aromas, textures, flavors, presentation.... not to be missed if you love food and culinary creativity to the max. It is a prix fixe menu, available with or without the wine pairing. The dishes are not small, so bring your appetite! Menu changes every weekend.

The service was impeccable by the whole team. We were seated at the Chef’s counter, which gave us the ability to watch and ask questions. Chef and team making a point to stop by the tables to speak with the customers about the dishes. Rebecca always made sure we were good and happy, and Trish always made sure our glasses were full!

Chef is passionate and having fun with this project, and it definitely shines through each course and the overall experience. Definitely a culinary must in the Coachella Valley.... because there is nothing like it there!

I searched endlessly for an intimate setting with a unique dining experience for our visit to Palm Springs in July 2018. Saw a few postings online about T&T and knew this was it. Unfortunately, I was too eager and they were not officially open yet! Fast forward a few months to November and we came back for our anniversary. The service was excellent as well as the food and drinks. They made our experience unforgettable and our stomachs full. We will definitely be back this summer and I am impatiently waiting to book my reservation. Thanks T&T!

Innovation is an apt title. This is my favorite way to dine-just show up and let them bring you carefully prepared little jewels. Every dish was executed beautifully, and we enjoyed having the chefs come to the table with each course to tell us about the ingredients and preparation. Truly delicious as well as distinctive. Would not hesitate to return or recommend. There were some pacing issues with the timing of courses but not too bad. Will enjoy sitting at the kitchen-side seating next time for a better view of the action. Wine list did not quite keep up. If you want to enjoy a drink before dinner, recommend the fireside seating at Rockwood along the water or stroll the grounds of the lovely JW Marriott resort.
