Why they're an Icon

Executive chef: Chef/Owner John Carver

From the OpenTable editors: It can take months to get into Chef John Carver’s wildly popular Italian restaurant, where there’s a custom woodfired grill at the heart of the industrial space. But it’s worth the wait for fresh pasta and epic steaks, like the cappelletti “bishop’s hats” stuffed with spinach and sauced with brown butter, alongside a 50-day dry-aged porterhouse “la Fiorentina.” Don’t miss the charred veggies, like roasted vine tomatoes with creamy burrata, and wash it all down with a house negroni.

Arrived 37 minutes earlier than my reservation time. The hostess’s were initially nice and expressed they would try to accommodate me sooner. The restaurant had various tables (7) that could seat 2-4 people available, (2-3) which seemed to be put together for a large party behind the hosts. There was only one couple ahead of our party of 2 and ironically not the usual wait outside of the restaurant, thus it was clearly just the other party and mine. Waited to be seated until 4 minutes from reservation time, yet various other smaller groups that arrived after were promptly seated as we waited , evident to be a hot spot where “you have to know someone” as whispered. Nevertheless, finally ordered. NICK is a phenomenal waiter and the assistant servers who aided last night were delightful. Graciously diffused the prior experience. The Octopus, Di Mare pasta & Tiramisu excellent! All Mocktails are divine as well, just need to be mindful that due to the congestion at the bar unintentional mistakes can be made without malice … so take a little sip vs gulp initially. It can be an intense surprise. Overall arrive at your scheduled time or minimally past it & make friends with the controllers lol

Overall, my experience at Red Ash was fine—but I left wondering what all the fuss is about. The ambiance is beautiful, and the decor creates a warm, upscale vibe that sets the stage for something memorable. The service was also solid: friendly, attentive, and well-paced. Unfortunately, the food didn’t live up to the hype. Coming from larger food markets like Chicago and New York, Red Ash would be considered average at best in terms of cuisine—at least based on the dishes I tried. The Handmade Potato Gnocchi “Gratinata” was overwhelmed by gorgonzola to the point that it felt like I was eating a bowl of just cheese sauce. I didn’t even want to finish it. The Wood Roasted Vine Tomatoes & Burrata had promise—the burrata itself was fresh and creamy—but the toast it was served on was soggy and saturated, which you’d never expect from a high-end Italian kitchen. The Wood Roasted Meatballs were just… basic. Not bad, not great—just bland and uninspired. The one standout was the Mezze Rigatoni alla Campagnola, which was the best of the bunch. Still, even that dish didn’t wow me. It was decent, but not something I’d go out of my way to order again. I honestly don’t understand the glowing reviews. If you manage to score a reservation, sure—go for the ambiance, enjoy the service, and cross it off your Austin food list. But if you’re here for truly exceptional Italian food, there are better options in town. Red Ash isn’t bad—it’s just not on par with what you’d expect from a top-tier Italian restaurant in a major culinary city.

Beautiful restaurant for an elevated night out. We tried the squash blossoms as an appetizer which was wonderful. Bolognese was the best I have ever had. My husband tried the pasta with crab which was also well balanced and delightful. I agree the bottles of wine were very marked up even for a restaurant of this caliber. Cocktails were delicious and on point. Would definitely return.

Vibrant atmosphere. Good choice of old world wines and interesting cocktails. We ordered the popular crisp garlic bread, octopus plancha and ricotta stuffed squash blossoms. Each was uniquely tasty. The imperfect Negroni and Cucumber flavored tequila were also bright and perfect complements to the starters. For dinner we ordered small sizes of freshly made spaghetti and gnocchi. Tummy. We split the veal ossobuco. Can’t say enough how humongous and delicious the shank was. Fall off the bone. The saffron risotto was creamy as ever. For dessert we shared a hot apple crostata. Again yummy. Overall, a great dining experience. Lived up to its reputation.
