Why they're an Icon

Executive chef: Chef/Owner John Carver

From the OpenTable editors: It can take months to get into Chef John Carver’s wildly popular Italian restaurant, where there’s a custom woodfired grill at the heart of the industrial space. But it’s worth the wait for fresh pasta and epic steaks, like the cappelletti “bishop’s hats” stuffed with spinach and sauced with brown butter, alongside a 50-day dry-aged porterhouse “la Fiorentina.” Don’t miss the charred veggies, like roasted vine tomatoes with creamy burrata, and wash it all down with a house negroni.

I was excited to try Red Ash after so many friends recommended it. Perhaps I had a a bad night there, but our experience was fairly negative. The starters, fried squash blossoms with ricotta were great, classic. The flavors of the blood orange-fennel salad and bruschetta were great. However, they all came at the same time instead of coursed-out which was surprising. The server explained it was best to share dishes family style, which means, you should get your order in courses, not dropped all at once. Not a big deal, but if you are an Italian restaurant you should ask about serving the food as in the culture, with courses. It's odd to drop it all at once and seemed about moving the table for more $$$ than making the service great. Our next course was Pasta Frutti de Mare. All the flavors were great. The texture on the pasta was a little too over for me, but I know people like the texture softer in the USA. I was excited to have the dry aged Fiorentina steak. It's a classic Tuscan steak and the menu says it's sourced well and aged. It was terrible. Completely under seasoned, bland, over rested, and cold. The waitstaff didn't bring any new plates for an expensive entree, so we were left with seafood red sauce plates to eat the steak on. The server seemed completely flummoxed the steak was poorly seasoned and cold . We asked for salt and olive oil and she suggested shallot butter to make it taste better. So sad. What a nice product and terrible cooking of it. The restaurant knocked off about $50. I was embarrassed for them. I still tipped the server 20%, not her fault the food was handled so amateurishly. Just sad. I left feeling the restaurant is more corporate in scope with money making as it's primary point and less about the quality of the food or taking care of customers and relaxing them. The whole place is stressful, packed, and doesn't seem to have confidence in making great food, but more about moving tables. It could be so much better.

Everything was great from start to end. Our server was so nice, helpful, and informative. We ordered bread, clams, prosciutto with fig jam and burrata for apps — all amazing. Our pastas varied, but everyone left more than happy. The blue crab pasta was our servers recommendation, chefs kiss! It makes sense why this restaurant is always booked up! 100% coming back here.

Wow! What an amazing dining experience. Everything was fantastic. We ordered beef carpaccio, tuna crudo, bolognese and the olive oil cake. I wished I had room for more!

The host was the sweetest, the server was very informative with all the daily specials. My friend ordered the pasta dish and the drink on special and both were absolutely heavenly! The bolognese dish was the best pasta I think I’ve ever had and you can’t go wrong with the espresso martini. Can’t wait to come back!

Well worth the 2-month reservation waitlist as Brandy was amazing at recommending a wonderful selection of wine, food, and desserts. Reserves my birthday dinner already as I’m excited to be back again soon.

The food was incredible, as usual. Our waitress unfortunately was not very personable or friendly. In spite of that I think Red Ash is the best restaurant in Austin.
