About this restaurant

Rai, a new creative and modern fusion concept, named after Founder Shrabaneswor Rai and Executive Chef Padam Raj Rai – focuses on SET TASTING MENUS with a predetermined selection of dishes that fuse the highest quality Japanese delicacies with unique ingredients from Japan and around the world. Expect razor-sharp sushi and sashimi alongside contemporary new-style Japanese dishes.

From Japan comes the highest-grade Hyōgo Prefecture Kobe and Kagoshima wagyu beef; Sanpuku, the finest nori from Japan’s Ariake Sea; Koshihikari rice and aged soy sauce from the Okada family, one of Japan's oldest soy sauce brewers. Aging takes place in 100-year-old cedarwood barrels in the same Samurai house where the business began in 1753.

Rai also uses a selection of tableware that has been handcrafted from scratch using recycled materials such as plastics, scrap metals, and wood.
