A tribute to the American hop, this complex Murky IPA features hand-selected Citra and Mosaic hops which accentuate the fruity esters of the Murky yeast strain. We double dry hopped this beauty to give it a super juicy boost, adding notes of dried mango, tangerines, lychee, and navel oranges in both aroma and flavor. United will be released in cans at 11am on Thursday, June 25th at both of our tap room locations. Limit: 1-12 (4-packs) depending on availability

We put our collective knowledge of brewing dank, murky, hoppy beers together and came up with a hefty Murky Double IPA with notes of notes of sweet citrus, pineapple, and peach with a ridiculously smooth finish. Euphorik is our take on the American Wild Ale and designed to activate, engage and delight the senses. Aged in formerly Pinot Noir French Oak from Napa Valley, these unique beers will take you on a journey of complexity in which you can smell and taste all the subtle ingredients that have come together over the years to form a flavor that we can only call… "Euphorik". Winslow has created a proprietary yeast strain over the years specifically designed for this beer which provides both the initial funk and the lingering bite that will make you remember this beer long after the bottle is dry. Euphorik is a rotating series, with different fruit additions each batch
A Flanders Red named after the Belgian town of Roeselare where the style originally developed. This style is near and dear to Winslow's heart after living in Bordeaux reminds him of Belgian Beer bars in the area. This red features a strong cherry aroma and a complex malt background of dark dates and figs, showcasing a bright cherry aroma over sour lactic and acetic strains. The complexity of this beer is driven by the yeast. The yeast is Winslow's proprietary blend containing multiple sachro, brett, pedio, lacto, and acetic strains, with Belgian origins. Following almost a decade of selection, and surviving a fire in the cellar below, this yeast has become its own unique blend designed specifically to work well in light-bodied, fruity red wine barrels. The barrels used to age this beer are French Oak and were previously used to hold Pinot Noir in Napa Valley
Our take on the Whiskey Old Fashioned. We start with a sour Imperial Red Ale aged in bourbon barrels from Breckenridge Distillery in Colorado and add organic cherries and orange peels. Aromas of dark cherry and bourbon emerge over a bright cherry acidity, followed by dark aged fruits and oak, while a subtle warming from bourbon
One of the very first beers we brewed here at Pure Project, Madeline is inspired by the old school Farmhouse Saisons of Wallonia, the French speaking part of Belgium. French for "season", Saisons were brewed in the cooler season and allowed to mature through the winter and enjoyed in the summer by the seasonal harvest laborers. These mixed fermentation beers were brewed with whatever grains, bacteria and wild yeasts were available on the farm, so there would have been lots of variety in this style of beer from farm to farm. Madeline is a blend of mixed fermentation Saisons aged in French oak barrels. Starting with one base beer, we separate it to barrel age with 3 different mixed cultures, and then blend these 3 beers back into the final product in bottles. One of the cultures we use is a native California wild yeast, domesticated from unpasteurized apple juice from Placerville, CA. The cultures we use in Madeline have changed a bit over time, and they ultimately produce a light and effervescent brew with the color of golden straw. Aromas and flavors of hay, pineapple and farmhouse funk emerge alongside a slight tartness in this easy drinking beer – the kind of beer you'd want to drink after a long day's work.

We are celebrating our first year of sourcing hand selected hops by releasing our first core Unfiltered West Coast IPA. Hand selection allows us to focus on what we think are the finest hops from each years' harvest, and we will continue to evolve the hop varieties in Pure West with the freshest and most flavorful hops we can find. This inaugural brew showcases hand-selected Mosaic, Simcoe, and Nelson hops to provide an intense aroma of pineapple with a subtle dankness. Sweet floral notes soften on the palate while leading to a solid bitter finish. Sourcing: Mosaic Hops – Loftus Ranches, Washington; Simcoe Hops – Scenic Valley, Oregon; Nelson Hops – Freestyle Hops, New Zealand. Inspired by our roots in Costa Rica watching the post-rain mist rolling off the jungle. Tropical Mist is a Blonde Ale built on a base of organic malt from Admiral Maltings in Alameda, CA, which is then fermented with our house Murky yeast. Crushed organic Valencia oranges from Lodge Ranch Organics give this brew a super refreshing finish, made for sipping slowly in the San Diego sunshine

The fourth member of our Quarterly Core IPA series is a hop-driven tour de force. We blended a trio of New Zealand grown hops to add assertive notes of lemon-lime, mojito, and delicate white wine, along with a hefty addition of Mosaic hops from Loftus Ranches in Washington to deliver finishing accents of ripe apricot. A thoughtfully mixed malt bill delivers a sticky full-bodied mouthfeel, with a hoppy soft bitterness as it finishes
To kick off this year's first Quarterly Core IPA – the third in our series – we celebrate the return of a beer that we rightfully named Force of Nature. This Murky IPA sports a murky yellow-gold color, a fluffy white head, and features a hop trio including Nelson Sauvin from Freestyle Hops in New Zealand, hand-selected Citra, and Amarillo. Citrusy, tropical, and pine notes flow from the glass to your senses, finishing with just a touch of bitterness. Force of Nature will be released in cans at 10am on Saturday, January 4th, at our Miramar location.
