As we inherited a space as historical as the former Mautz Paint Company warehouse, we had to do it justice. We kept our building’s architectural features intact while updating the space with contemporary design elements and nostalgic touches. We wanted to keep the space faithful to its roots; filled with hues of colors and textures reminiscing of times when the East Washington corridor was a booming industrial area in the city.
Our menu features steak cuts made in-house, chef’s masterpieces, artisan salads and soups, along with a unique beer and hand-crafted cocktail selection.

We were there on Thanksgiving night. I had the turkey dinner special and my wife had the Palette Burger. Both were quite good. My first bites of the turkey were too salty but once I got through the top layer of turkey, it was excellent. I think they salted it too heavily in the kitchen. The green beans with fried onions and cheese was inventive and good. The mashed potatoes were also good but not special. My wife's burger was very tasty and the fries were excellent. The theme of the place is based on the Matz Paint Factory, which is what the building used to be. The interpretation was cool and they carried the whole idea into the Hotel Indigo as well.
Really a cute restaurant. The appetizers and entrées were delicious. Our server was spot on with her recommendations. For what it’s worth both Chardonnays were quite good
Food was excellent, moderately priced. Drinks were very good, but just a tad overpriced. Lovely interior and the service staff were great. We were there on a Wednesday so it wasn't crowded and noise level was perfect for holding a conversation. The one thing we weren't keen on was that a portion of the prep area (paper towel holder, area with dishes, etc.) was really visible from all tables - just not a great visual experience. But that's a small complaint - in general we were very satisfied and would definitely return.
Interesting options making it a difficult decision on what to order. The steak was the winner! Delicious!

Chicken Parmagania was a foulup. Noodles were very cold like they just came out of the refrigerator
Nice ambiance and decor. Food is above average, though not earth-shattering. This restaurant is inside the Hotel Indigo, which isn't clear in any of the descriptions.

Food was delicious but inconsistent in serving temperature. A large wedding reception in the bar area outside the restaurant was deafening making table conversation a challenge. Restaurant was very clean. Atmosphere is not for intimate dining having more of a cafeteria feel and appearance. Cute motif honoring Mautz pain. Will return for a casual lunch rather than a dinner date.

great food and such fun shareable with different sauce options. We loved trying all the different sauces as a group with the cheese curds and fries!

Food was great! Had a steak, burger, soup, cheese curds, and key lime dessert. The cilantro garlic aoli was delicious. I would eat that on everything.. Service was great. Will return.

Overall a nice experience. We ate outside and the traffic was very noisy. The service was very friendly and accommodating, but slow at times. I had the berry salad, my husband and son had the sicilian chicken parm. All enjoyed. The food was excellent. My biggest gripe was open table said there were no later reservations - but the restaurant was not more than 50% full inside or out the entire 90 minutes we were there.
We drove to Madison from Des Moines for a weekend getaway. Our experience at Palette was fantastic. A very clever theme with the Mautz paint theme. The food was delicious and the service was excellent. Highly recommended.
The themed idea of the restaurant was so fun! We had a great, energetic waiter who was very kind and took good care of us. I did feel that the prices were a little high, especially on the cocktails. Overall a very nice dining experience and a great place to take my parents when they came to visit me!
Awful service. Rude server. Never checked on us or refilled our drinks or waters. Took 45 minutes to get our drinks for a party of 4 and took 30 minutes just to process the check. Love the food here but service was just terrible.
Place is amazing. Really nice and cozy inside. We were seated on the outdoor patio area which was very nice for the evening. Our server was very nice and helpful. He gave great drink ideas and made us felt welcomed. The hot wings are delicious as well as the Beef Short Ribs. We tried several of the drink choices and the Lawn Flamingo and Starry Night were our favorites so far. There is $15 valet parking on site if your worried about parking. A great place for a date night.
Very flexible management and helpful/courteous staff. The Espetadas will be a repeat for us. Delicious coffee, and nice wine and cocktail selections. WE loved the outdoor seating option during COVID.
Cleverly themed restaurant that complements the adjoining hotel... menu is great, eating outside even with the bustling E Washington Ave alongside was so pleasant!
Both our servers were awesome! Very knowledgeable and definitely encouraged us to check out breakfast and lunch at Palette. My husband loved the French Onion soup & I lurved the fish tacos. We’ll definitely be back!
The service at Palette was so poor that, despite good food when we finally got it, I may never be back.
Not busy - but it took 20 minutes to get water (and that was only after asking)
Our drinks took an additional 15 minutes (a glass of wine, a soda, and a simple mixed drink.
Food for two people came out after a long wait - 3rd person’s food was forgotten entirely, while the other dishes got cold on the table.
When we inquired for the 3rd meal, they admitted it was forgotten and it took an additional 15 minutes to arrive. There was blame placed by one wait staff by the other, rather than just fixing the mistake.
We had to chase the staff to get the bill.
No one checked on us, asked if our drinks needed refills, or apologized for the lack of service. Utterly disappointing.
3 of us had lunch at Palette, the restaurant was empty except us. One of ordered Salmon medium rare, came well done. I ordered 1/2 sandwich and a cup of soup, I got a full sandwich and a cup of soup. Our third person ordered chicken pesto sandwich and he said it was excellent. Our waitress was very nice but only had been working at the restaurant for a week, so we had to be patient with her and she did fine.
A typical hotel restaurant . Essentially all meals are around $20 even the burger. We sat outside, and the traffic was loud. The waitress didn't know what kind of salmon was being served and when she asked the chef she got a bizarre answer. Not worth $75 for 3 without any alcohol.
Noise level elevated because we had outdoor seating next to E Washington. Hardly their fault.
We ate lunch outside and the food was delicious. It’s located on a busy street and that was noisy . The interior was dark and quiet. I would go again and try dinner inside.
Loved the Palette! Nice ambiance and the service was tremendous. The food however really made it a perfect evening! Salmon was prepared perfectly and the chicken was to die for!! Will definitely be back!
We ate outside, so can’t really judge inside ambience or noise level. Menu had good options. Fun special cocktails. All four of us tried a different one. Service was good and food delicious. Free valet parking available.
We love Palette. Food, Service and drinks are always good. We have never been disappointed and have had most of the meals listed on the menu in addition to trying most of the cocktails. Always satisfied.
Our server was friendly and checked back with us frequently. We both ordered the French onion soup which was overly salty. Our main dishes, salmon and steak, were very good. We enjoyed our experience and were glad the restaurant was able to re-open. We plan to return.
I was surprised by a lot of things; the good, though, outweigh the bad. I really enjoyed all the food and drinks (soft pretzel bites, clean slate, starry night, and espetadas) and service! The spiders crawling all over the outdoor dining area and the really far away bathroom, let alone the noise (which you can’t control), are reasons alone not to dine outside. I will be back tho, to dine indoors, soon.
We were moving my daughter to Madison and this was our final dinner in the city. I'm so glad we went to the Palette because it was such a wonderful way to end the trip. The service was great, the food was excellent (chicken parm, braised short rib, and sirloin steaks) and the cocktails were really fun. My only wish is to improve/expand the dessert menu!

The highlight of the experince was definitely our server, she was friendly and attentive to our needs. I was disappointed that they were only offereing a limited menu. I searched the website prior to making the reservation and found no menu limitations. Due to diet restrictions we were limited to appetizers which were very good but couldnt overcome the disappointment of not being able to order our prefered meal. The place was hopping as a nearby concert venue was sold out that evening.

They only had burgers and fish tacos on the “limited menu”. Apps included nachos, wings, cheese curds and stuffed mushrooms. Our wine was served in a plastic disposable glass. The women’s bathroom was dirty and did not have any toilet paper. The dining room was so bright I felt like I was in a food court. Absolutely horrible experience and definitely not what we’ve seen there before. I regret wasting a night out (with a babysitter at home with the kiddo) at Palette.
The menu was even more limited than what was posted online. They have valet parking however the hostess never told us so we ended up paying for parking and walking to the restaurant.
Didn’t know menu had been reduced to 3 types of burgers and fried cod tacos. Great service. Acceptable food. Will go back when they have their full menu available.
