Sat at the bar and had great service. The food and cocktails were unique and delicious! This was our first time there and we will be back.

Not at all impressed with lunch during CES. Website stated a special a la carte lunch menu, but only had a three course fixed menu available. $45 got you a fairly generic soup, salad or tiny charcuterie and entree that was the size of an appetizer. Third course was tiny ball of sorbet. Left hungry and feeling like I paid way to much.

The service was horrible we got our food before we got our drinks. The food is not even close to real Peruvian food. We always suggest good restaurants to friends to try when they go visit vegas this restaurant will not be one of them.

The food wants to be more Peruvian than Japanese. In fact, most dishes in the menu are supposed to be Peruvian. We had a full dinner there. The waiter was very nice, even though the dishes came too fast. The Peruvian dishes were far from what they should have been, not to mentioned way overpriced. If you want to experience real, good and fairly priced Peruvian food, this is not the place
After being told that no other tables were available because of New Years we were sat next to a table of small children that were noisy. When asked if we could be moved we were told no other tables are available. The manager was nice enough to place us at another table. We left the restaurant after our meal and still there were more than half the tables available. Poor host services
I visit the Venetian about three times a year and I had been keeping an eye on Once to bring my Peruvian wife. We visited on NYE and I went with the Prix Fixe menu as it was geared towards more traditional Peruvian dishes. For $95, I got a salad, Lomo Salgado and a desert sampler that included an Alfahore, a small piece of flan, and a sketch piece of Pannetone. Bear in mind, this is a $25 meal at best in any Peruvian restaurant anywhere else that isn’t a Gaston Acurio restaurant.
While the Lomo had a better cut of meat than I expected, the flavor was pedestrian and lacked authenticity. All in all, it was a terrible value and really doesn’t fit in with the culinary map of the Venetian. I could have gone to Sushisamba and gotten something more in line with a Japanese influence on Peruvian food.
Once (English spelling) is probably an apt name for the restaurant as that’s exactly how many times I’ll visit.

Excellent overall! Service is very friendly and food is truly amazing: very tasty, fine cuisine from starters to desserts. Very nice ambiance as well, and lovely decor.
Service was poor and the server was staring at us awkwardly from behind the bar. Never checked up on us. Appetizers were really good, but the entries were a complete miss. Wasn’t worth $300.
The food was very good but the sticky white rice was fantastic. I’ve never said that about rice before but this was cooked and seasoned to perfection. The restaurant was quiet which can be hard to find in Las Vegas. I would recommend it for a business dinner or just a quiet get together with friends.
This Peruvian-Japanese restaurant is a hidden jewel. Even though it's in the Venetian-Palazzo, it's upstairs in an area that is currently being renovated (near Sushi Samba). The food is excellent. We had eaten there a year ago, when it first opened and loved it. The flavor profile is wonderful. The menu has changed somewhat, and we ate there for lunch, but we did check out the dinner menu and are anxious to come back as soon as possible.
Food was excellent, very tasty and well presented. Only problem, and one that’s becoming way to common in the restaurant industry, is that they’re understaffed. So getting drinks was slow, getting food took about one hour after food was ordered. But, our bartender and waiter were very pleasant.
Over all the food was good. The red snapper appetizer was very sour and the fish...what fish? Maybe pieces bigger than my thumb nail so the sauce over powered it. Our waiter and bus staff were great! I have a bad tailbone so the chairs are all wood so sitting was uncomfortable. Maybe they should offer cushions?
The waiter was great. The meal was one of the best steaks I’ve eaten in a long time.

We enjoyed Once very much, food was delicious, we shared everything. Our favorite were the ribs, they were tender and yummy! Service was impecible.
Excellent food, very accommodating of our large group (including an infant), and it was quiet enough that we could actually talk to each other!
We had a very enjoyable dining experience at Once. Our server was outstanding, she made great recommendations and was very attentive as were all of the staff. The octupus was tasty, pork ribs were tender and flavorful, kampachi ceviche was excellent, and the Pollada was a favorite. We were very happy with our food and service. Unfortunately, there are some renovations going on at the Canal Shops right in front of Once, which hampers the foot traffic for them. It is a great place to dine.
Visiting Vegas with wife
This was a tremendous experience! Our waiter Ian was incredible, very knowledgable about the menu and uplifted the whole experience! The food was one of the most delicious meals I’ve had in Las Vegas, if not the most delicious. The oxtail bibimbap was out of this world. Very dish we had was very good.
Having been a fan of Ricardo Zarate's Los Angeles efforts, we decided to make a reservation for my bachelor party in Vegas. Service was great, drinks were great and the entire meal was really great. Standout dishes for our group were the Pollada, the lobster Chaufa, the Braised Fennell salad, the Chiccaron Karage, the charred eggplant, and the fried dorado, but there were no let down dishes of the many we tried. It's worth walking back into the shops to find this culinary gem.
Surprisingly, it was not busy given the location, service and quality of food. We will return and also recommend it to others. Great flavors with The Peruvian/Japanese fusion.
Service was terrible. Everyone got their food late and not all together. From the first dish that came out to the last, there was probably a 30-45minute difference. We had to ask for water 3 times and waited over 15 minutes even getting out first sip. Food was sub par and not even hot. Server got a few of our orders wrong. They tried over charging. Just a slew of issues with this place.
Being a Peruvian/Asian fusion restaurant there were several flavor profiles we were not familiar with. Adam, our sever who was terrific, expertly guided us through the menu including the drinks and offered several suggestions all of which were excellent. Everything we ate tasted great. The dishes were flavorful, fresh and interesting. The atmosphere was laidback and welcoming, the service friendly and helpful and best of all the food was something we would come back for - the sign of a truly great restaurant.

Fantastic food at Once. The food was Peruvian/Japanese fusion and we were lucky enough to try 5-6 items as a table. Everything was fantastic. The PERUVIAN ARROZ CHAUFA dish was a must order.
Loved for dinner not so much for lunch! Very limited menu. Had a delicious drink but don’t expect a normal size glass very small for $17!!!! Too expensive!!
We have never returned an item but the octopus was burnt and terrible. I liked the other dishes but they were just okay. The best thing on the menu was the bread. The quinoa bread was to die for. So tasty.
Food was fantastic. Service was solid and despite a industry event party going on in the outside seating area the noise level was manageable at all times. Highly recommend for anyone - great for a date, a business dinner or anything in between.
Once’s food and ambiance was OK, but everything seemed rushed — as if they wanted us out to resell the table to the next couple.
We understand tapas are served when the kitchen prepares them, but we have never had a tapas restaurant serve all 6 dishes at once (maybe that is why the restaurant was named that)! So be forewarned, you apparently have to stage the timing of your own food by ordering only a bit at a time!
What a great place, was not familiar with Peruvian food. The waitress was very helpful with our order, the food was different and tasted wonderful. We most definitely would do it again. The ambiance, the vibe is a little low key for Vegas, not sure what they could do to turn that up a notch, it was quiet for a Saturday night. But if you're just interested in good food good there, you'll love it. I hope this place fills up with people, I want it to be there my next trip to Vegas.
