Niku, by the Omakase Restaurant Group, hosts a dining room oriented around a roaring custom binchotan charcoal and wood-fired grill, where guests watch as Executive Chef Dustin Falcon (Lazy Bear, The French Laundry) and his team prepare steaks to perfection.     We started the dinner with bone marrow and crispy pig ears, both of which were tasty and addictive. I especially liked that they gave us chopsticks to enjoy the pig ears. They were crispy outside, soft and had some chewiness inside, sweet and perfect with alcohol. We had the flat iron and tomahawk as main courses. Both were decent but not homeruns. We ordered medium rare and I suspected a little more charred may have added more flavors but oh well. Pickled vegetables were good companions but I wish them being more sour and flavorful to kickstart the main courses. Good selections of wines and drinks.

    The overall experience was just okay. The food was good, but it wasn’t extraordinary—it didn’t leave a lasting impression or feel particularly memorable. That’s not to say it wasn’t well-prepared; it just didn’t stand out as exceptional. What significantly impacted our visit, however, was the service. My partner and I were new to both Wagyu steak and fine dining in general, so we wanted to take our time and ease into the experience by ordering a few items gradually. Unfortunately, our server didn’t seem to respect that approach. Instead, she repeatedly pressured us to order more—suggesting we’d still be hungry or encouraging us to try additional lighter sides and steaks—when we were simply trying to enjoy the evening at our own pace. We want to acknowledge who this server was, though I don’t recall her name. She appeared to be Asian American, and we had a 5:30 pm reservation, making us one of the first guests seated that evening. From the start, her demeanor felt a bit judgmental, as though she saw an opportunity to upsell rather than help us enjoy what was meant to be a special birthday celebration for my partner.

    I found the food to be exceptional, however if you are really hungry I would recommend something other than Wagyu. It comes in 3 and 6 ounce portions. Watching the chef prepare the ever popular tomahawk cut, which is a much larger portion, would have been preferable.
