    Truly a memorable experience! Aldehyde is a must-do in Paris. The chef and staff were friendly and fun. The food was superb. I could not say enough good things about this special place.

    Une expérience cohérente, créative et profondément maîtrisée: Nous avons déjeuné chez Aldéhyde un samedi, profitant de leur menu déjeuner à 45€. Dès l’amuse-bouche jusqu’au dessert, une chose frappe : l’identité du chef est claire, assumée et omniprésente dans chaque assiette. Une thématique très terrienne traverse tous les plats, autant dans les saveurs que dans les choix esthétiques et même la décoration du restaurant. Le chef accueille lui-même les clients, en duo avec le responsable de salle, d’une grande gentillesse – un accueil chaleureux et sincère, qui donne immédiatement le ton de l’expérience. Le chef est également présent tout au long du service dans la cuisine ouverte, impliqué dans la préparation et le dressage – une rareté dans les établissements étoilées, qui témoigne d’une grande exigence personnelle. Voici ce que nous avons dégusté : •Un amuse-bouche végétal, à base d’une pâte verte relevée par des oignons frits croustillants. •Une entrée de salade de carottes, sublimée par une vinaigrette florale, avec des notes exotiques de fruit de la passion. •Un cabillaud parfaitement cuit, littéralement fondant, accompagné d’une sauce aux asperges et petits pois, ainsi qu’une sauce vierge verte pleine de fraîcheur. •Enfin, un riz au lait citron-basilic absolument époustouflant, où le chef a brillamment joué sur les textures, les températures et les arômes. Un dessert de chimiste, aussi déroutant que mémorable. En résumé, Aldéhyde est une pépite : une cuisine de chef, lisible, sincère, avec un rapport qualité-prix exceptionnel. À découvrir (et puis revenir) absolument.

    As far as we attended Michelin star restaurant, we were expecting that our mentions during reservation would be taken into account. I mentioned birthday, and it wasn't taken into account. I mentioned the type of course, and it wasn't taken into account. These are really small but still very important aspects.
