   The space is very cozy and classy, and the service was very attentive and professional. The food was either too sweet glazed / sauced or too salty. Our biggest feedback is - please don’t have trivia night on a Friday at 7pm. We were planning a nice cozy date night dinner with conversation and had to leave in a hurry because of the noise.

   The food was fine; a bit in the unremarkable side. We both had the winter salad which was sadly overdressed. Otherwise it would have been quite good. My friend had the (deconstructed) onion soup which I found convoluted and bordering on tasteless. What makes an onion soup stand out is the deep umami of caramelised onions backed up by a strong stock. This had neither. The topping was a slice of anemic bread wrapped with unimpressive cheese (hard to tell if it was Gruyère). All that said, the people watching was the height of the meal.

   Mollie's was pleasant, quiet, food was very good, pricing was reasonable for Aspen. The restaurant is in the lobby/bar and while they have done a relatively good job of shielding the main entrance area from the dining tables but you are still in the lobby of the hotel. This would be a good place for cocktails as it is out of the core of Aspen and the chairs were comfortable. Our dinner was delicious and our server was wonderful but the atmosphere is one of hotel lobby and not of a dining room. I will visit the bar again in the summer to see if the outside areas are utilized for dining in the warm weather.

   This not a restaurant , it's a bar with a seating area. They have a 48 hour cancel policy and charge your credit card up front 25.00 pp for a reservation and then refund upon arrival. It holds the strictest policy in all of Aspen. Absurd .

   We made reservations for in advance and even paid a deposit and when we receded, our table of six was right by the hotel front desk, so we have constantly people coming and checking in passing our table by the elevator it was a disaster will not return

   Great dinner experience for our family. Especially impressed with the special vegan menu as one of our party was vegetarian!

    Delicious food. Accomodated a food sensitivity with care and were willing to substitute another side. The service was attentive and came with a smile. My water glass was always being filled. Very enjoyable dinner and time at Mollie Aspen.
