Executive chef: Peter Merriman

From the OpenTable editors: The LA Times once called Peter Merriman “the aloha Alice Waters” because of the chef’s lasting reputation for championing local ingredients. At Merriman's, which first opened on the Big Island in 1988, that translates to updated Hawaiian classics like macadamia-crusted mahi mahi and taro falafel. The group blazed trails across four islands by 2018, and the latest Honolulu location stands out for its wild green-and-white floors and jungle prints.

All of Peter Merriman's restaurants share a common mission statement: Do the Right Thing! Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.

    Merrimans provided a wonderful atmosphere and our dining experience was excellent. Our waiter was friendly and informative, knowledgeable and we will not hesitate to visit Mermans again.

    I didn’t know or look at the bill that charged a surcharge to pay the kitchen staff - I don’t think I like or need that extra hidden cost in an already high cost environment of Hawaii

    Everything was great. The only thing I did not like was being seated next to the little station where all of the waiters come up to type in stuff on the computer and three of them gather there sometimes at a time and one of them has their behind next to my husband‘s head practically and then they talk loud and some of the things they’re saying there are not things a guest wants to hear. It really was not a good choice to sit us there. I actually moved our table slightly over further just to get further away from them.

    Great food, great service, and a really nice atmosphere. Everything was fresh and tasty, and the staff was super friendly and attentive. We had a great time and will definitely be coming back!

    Pretty loud inside. We opted for the outdoor patio. Nice people watching and lots of dogs going by. A nice experience.

    Our April 27 luncheon was fair, though we have frequently dined at Merriman for lunch with friends and Washington D.C. officials. The start of service with glasses of water, coffee, and appetizers (Hapa Poke, Organic Taro Hummus) was good until the long lag for our entrees and the refill of ice water. As I glanced to see if our guests participated in their meals, I noticed those who ordered the fresh fish sandwich and Fish & Shrimp & Chips were fine. Though our local-born / Washington D.C. honored guest, her dish of egg benedict was overcooked, and the kalua meat survived the heat. My excitement about the French toast, I need not say, but it must have been sitting near the heat; it was hard to separate the toast-french toast that's adhered to the pan. I was able to pick the top of the bread. As the dessert menu arrived promptly, we all eagerly anticipated the sweet finale to our meal, especially those who had reserved their comments about the egg Benedict, kalua, and French toast. However, between the clearing of our table and the time to peruse the dessert menu, there was another delay placing the dessert order with our waiter. As hosts, we decided to ask for the tab, which required flagging the waiter, who was frequently seen spending much time at the waiter station. Disappointed with the overall experience, we settled our tab and took our guests on another adventure to enjoy dessert elsewhere. We had hoped to leave an impression on our honored guest for her first experience at Merriman's Honolulu.
