Matsudai Ramen is Wales' first and only proper, standalone ramen shop. It was launched in September 2019 by self-confessed ‘ramen geek’ James Chant as a means to scratch a creative itch and recapture his mojo after becoming disillusioned with the music industry work he had been doing all his life.

With no background in cooking, Matsudai is a true labour of love for the now-chef - an exercise in taking things as far as you can and not compromising. Matsudai's creations are just as heavily influenced by US chefs as Japanese ones, with James getting started by emulating the bowls of people like Mike Satinover, Ivan Orkin and Keizo Shimamoto.

Regardless, this is PROPER ramen, and it's attracted a devoted following amongst the UK's food-loving community. The care and attention which goes into every bowl is obvious to anyone who tastes it, with Matsudai picking up plaudits from Jay Rayner, Tom Parker-Bowles, Uncle Roger, Pippa Middlehurst, Melissa Thompson and many mor

Both the ikei and vampire ramen's ordered were both delicious and tasty. We were gutted there was no chicken karagee available but the oyster mushroom karagee we had in its place was really tasty too. Staff were friendly and informative

The Matsudai Experience was excellent! The food, service, hospitality.. everything was world-class! I will definitely be ordering ramen kits from you guys in the future. Please come back to London soon! I went with my best friend but I will bring more friends along the next time you come to town! Thank you team Matsudai for a phenomenal dining experience. Ramen was reminiscent of the real thing in Japan and tasted very good (twice the price but that’s to be expected - around 13 to 15 quid). Simple menu which makes it easier to choose. Karaage was good too. Service was very good, there were a couple of small issues but they were quickly fixed and you could tell the staff wanted to help and get things back on track quickly and were extremely attentive but didn’t bother you if you hadn’t called them over. Drinks were standard pricing, they could have charged more but didn’t. Overall really enjoyed it
