Manta is the signature restaurant of the iconic Mauna Kea Beach Hotel and has breathtaking views of the Kohala Coast. The menu is a curation of Pacific Rim cuisine with seasonal, local, and sustainably-produced ingredients.
Chef Bryan Nagao has gained formidable reputation in the international food community. He was once described by American media as "the most notable figures in rendering Modern Asian cuisine in the Northern hemisphere". The creativity permeating his cuisine stems from the diversity of his culinary background. Bryan's cuisine is a multi-faceted reflection of his Hawai'i Island birthplace, his Japanese ancestry, and decades spent in the finest restaurants in Hong Kong and Taipei.

Sylvia was amazing and an asset to the restaurant. The wine list is extremely good but availability of choices sometimes is limited.

The venue was beautiful, the service was excellent, and the Manta Ray viewing spot was a bonus. We saw a couple of rays after dinner.

We dined here June 2025. The hotel is under renovation so it wasn’t busy which was nice but the service staff needs some better training. Not very attentive especially for a slow night. The food really just didn’t have flavors. I had the tomato soup, just acidic, no flavor. Then I had the squash raviolis, again the flavor lacked. A little more salt could have made a huge difference. The Waimea chicken was tasty but the portion was small. The kids chicken fingers seemed to be ok for the kids but the kids sundae was not really kid friendly. The chocolate ice cream was a variation of either dark chocolate or something else so wasn’t enjoyed by all kids. For the price, which isn’t an issue if things are worth paying for, I would unfortunately not return to this restaurant.

We came early to sit at the bar for a drink before dinner. Oddly, the only seating has the ocean view at your back, looking into what sadly has become a tired and in places decrepit hotel interior, greatly in need of a facelift. The bartender could not have been less interested in us. I handed him my credit card to pay, with the card obviously having my female name on it, yet he handed it back to my adult son with a “thank you, sir” after running it. For dinner, the sashimi was drowning in a sickeningly sweet sauce, the fresh catch was in fact not fresh, it tasted fishy and was overcooked, and we were dive bombed by insects throughout the entire meal. The sweet curry shrimp was excellent, the one bright spot.

My fiancé and I ate here for his birthday dinner. We ordered a bottle of Blanc de noir champagne but our waiter overheard blanc de Blanc and opened it before asking if it was the correct bottle so we just went with it. The appetizers were the star of dinner. The oysters were the best I ever had, we ordered a second round. If the dinner was only apps, easy 5 stars. The main dishes were standard for what you would find in Hawaii, I had the tenderloin steak, ordered medium, and received med well. As for dessert the goat cheesecake was delicious. The serving assistant staff was phenomenal. Our waiter was good too, other than the champagne mix up. As for the ambiance, I booked a table at sunset for the view. The hotel is going through construction and we were sat at the very end next to a giant black construction wall. The tables were also pretty close together because of this so we overheard the neighbors conversation all night. He was going to ask me to marry him over this dinner but opted for a beach setting due to the lack of intimate ambiance.

Absolutely outstanding experience! We went to celebrate our 15th anniversary and was lucky enough to be seated in Blakes section. He Eduardo and the entire staff made it an extremely memorable experience. The food, presentation and of course the view are absolutely breathtaking. What a special evening it was. We are so excited to come back again next year. Mahalo from our full hearts.
