Established in 1974, La Cueva was the first Mexican restaurant in East Colfax and has become a staple in the community. Owner Alfonso Nuñez proudly keeps this family business going with dishes made from scratch using recipes passed down from his parents, as well as his own creative touches. La Cueva uses fresh ingredients to prepare its meals and is also known for its handmade, ready-to-order tortillas. Its homey setting is great for enjoying a meal with the entire family. La Cueva offers breakfast with dishes like huevos rancheros and menudo. Guests can come in for lunch or dinner and begin their meal with an appetizer of nachos or quesadillas. An entrée of grilled chicken breast covered in a mole sauce, fajitas, chile relleno or pork shoulder with onions, tomatoes and jalapeño peppers will delight the palate.
