    Jul 10, 2025 only
Known in Japan as 'Maguro Kaitai', a Tuna Carving Ceremony celebrates the craftsmanship, precision, and respect involved in preparing one of the most prized ingredients in Japanese cuisine – the bluefin tuna. At this event, KIBOU’s Senior Head Chef Jay Manglicmot and his sushi team will expertly carve and present a whole tuna, guiding you through the anatomy of the fish and the varying textures and flavour profiles of three of its most revered cuts: • Akami – The lean, deep red meat from the sides of the tuna. Clean, meaty, and balanced. • Chu-toro – From the belly, this cut features delicate marbling. Rich, buttery, and tender. • O-toro – The fattiest and most luxurious cut, taken from the lower belly. Intensely rich and melt-in-the-mouth. This will be followed by an 8-course Bluefin Tuna Tasting Menu, where we'll present a selection of small plates curated to showcase the versatility and depth of this magnificent fish. The menu will also be served alongside a matched flight of drinks, with both alcoholic and non alcoholic drinks flights available. This Experience is presented in partnership with Kirin Ichiban as part of Cambridge Food and Drink Week, and will include welcome drink, complimentary miso soup, dessert, and a range of Japanese infusions to end your meal. 'Japanese' restaurant? Not even close. Thumping music, impossible to speak quietly to direct neighbours at the table, horrendous echoes of other people raising their voices to speak over the music and others rasing their voices to speak over the music, and the food coming in bits and pieces, which meant we had rice that went dry while waiting for something to eat it with, then gyōza, not much good for rice, then one person had their noodles, then a 30 minute wait, then sashimi. Not even. Sushi, which could be excused for needing to be made. Overall, the food was average at best, not warranting the price. We expected somewhere really special that we could remember and go back to for special occasions. It felt like eating in somewhere like wagamamas, not decent restaurant. Never again. I cannot recommend this place.

A fabulous first time experience, the food was excellent, the service was helpful and polite, we were made to feel welcome. I would definitely recommend and will return to this or one of their other restaurants. The decor was good, maybe a little dark, but overall a nice setting.

Bland and unseasoned starter. Visually stunning appealing grey tuna sushi and overcooked sticky sweet udon noodles for main. Declined desert on the house. It was for a birthday so a mediocre experience in what is a lovely room.

The standards and quality have definitely gone down. We ordered the cauliflower and the portion was much smaller than the table next to us. When I mentioned it to a person who appeared to be the manager, he said it depends on which chef is preparing the food. This makes absolutely no sense. Also my ebi tempura roll did not taste fresh at all. I didn’t mind paying the prices before as I was getting quality. But now that the quality has gone down, there is no need to go back. So sad because I really enjoyed eating at KIBOU. Also there was hardly anyone in the restaurant and the service was extremely slow. I had to ask for my last dish 3 times.
