J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    A true dining experience with beautiful ambiance, exceptional service by Charles, the best crab cake I’ve ever had, and an exquisite filet mignon. It’s worth the wait get on the guest list and make your reservations at once!

    Outstanding!!!! We had the crab cake & steak tar tar bruschetta and Italian bread as appetizers and they were so delicious!!! I ordered The Godfather specialty drink and it was perfect! We split the 40oz ribeye medium and it was cooked to perfection and it tasted amazing!! We also got the corn brûlée, lobster fried rice, sautéed mushrooms and baked potato gnocchi and each were incredible. For dessert we had the Strawberry vacherine, bananas foster and German chocolate cake and each were great (chocolate cake was a little dry). Our server was exceptional!!! We will definitely be returning!!

    Jessie and Tate are the kind of bartenders/servers you hope to find but rarely do. Warm, knowledgeable, and effortlessly capable, they create an atmosphere of refined luxury that sets J. Carver’s apart. Jessie crafts elegant cocktails that feel tailor-made for your mood, while Tate lights up the room with his bright eyes and signature wit. J. Carver’s isn’t just a great steakhouse—it’s the one to beat in this city. Few places can match its quality or level of service. Easily a 6 out of 5 stars experience.

    We visited for our wedding anniversary. I would give it a B+. Firstly, the ambiance is great. It’s dark and energetic and bustling. Really liked the vibe of the place. They were also very kind to put a rose and a card wishing us a happy anniversary. Our server, Nick, was fantastic. Explained everything well, was polite and prompt, and overall amazing. Cocktails were good. The food I would classify as just okay compared to other high end steakhouses. We started with the smoked hamachi crudo. It was good, not great. I think we just prefer the non-smoked version. We then moved to the crab cake which was fantastic. Highly recommend. The entree was underwhelming. We split a bone-in NY Strip and the baked potato gnocchi. The steak was lacking in flavor. The chive butter didn’t really add anything. I would rank it lower than Eddie Vs, Capital Grille, or Perry’s. The gnocchi was underseasoned. It badly needed some salt. The bites with bacon were okay due to the saltiness. The texture was very different. Most gnocchi is firm, but this had more of a marshmallow texture. The dessert was the star of the show. Nick recommended the lemon semifretto and it was incredible. Get this if you come here. It’s perfect after a heavy meal. Overall I’m glad we tried it but for the money I feel like there’s better experiences.

    Experience was good, but I’ve had cheaper drinks for higher quality, better steak for much cheaper and the sides were average. I think ratcheting down prices and picking up the lighting just a smidge would be helpful. Had a phenomenal male server though. Age 40, beard, cool fella!

    We sat at the bar and it was amazing! Huge wrap around seats make it very cost even there at the bar! Oysters were freshly opened and served perfectly. Bone marrow was delicious! Fillet was perfect. Beverages were top notch mixology! Wine selection was European and very tasty! Fantastic romantic mood and vibe - best place for a great date night out!!
