J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    We took our family of 4 out for dinner to celebrate our daughter’s 18th birthday. Everything was fantastic from the minute we walked in. We enjoyed the fresh oysters, Italian bread, filets, sole, gnocchi, fried rice with blue crab, and mushrooms. Oh and then chocolate cake for dessert…to die for even though we were all so full from the meal we could barely finish it. There wasn’t anything that was sub-par and we would definitely dine again.

    I have eaten at dozens of high end restaurants all over the country and the service at J Carver's is at the top of the list. The manager, Andrew, was wonderful in making sure our experience was top notch.

    This place is amazing but I would not get the hamachi or ribeye again. The porterhouse was better!

    The waiter, Loren was awesome! The food was great except the steak. We shared a 40 oz Tomahawk ribeye. The flavor wasn’t great. Had to add salt and it was a bit tough even though it was medium rare. I just think when you pay for that kind of steak, it should be outstanding. Everything else was great and our waiter was great.

    I come to J Carver’s every time I’m in Austin and have only had negative experiences when I am waited on by one particular bartender. Every other time it’s amazing!! This time, the bartender cleaned up our area when we left to use the restroom as if we were done, which basically forced us to leave. Very disappointing.
