J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    I was celebrating a personal achievement and they made me feel so special! They gave me a card saying “cheers to your intuition” Multiple folks working there came over and congratulated me on my achievement/realization. I couldn’t have picked a better place to celebrate. Thank you so much to the J Carver crew!

    A huge treat as it’s pricey. But the food was topped only by the wonderful service. A bit noisier than i would prefer. And ask for a table away from the front door. But there is honestly little to be critical of at this spot.

    We brought our out of town friends for dinner, Andrew was a great host, he seated us before our reservation time and was very nice. Brenden our server was both entertaining and friendly, very knowledgeable about every dish. We will definitely be requesting him again. Try the lobster bisque, it’s incredible. Food was amazing as always!!

    Alex and Brendan were outstanding and always knock it out of the park every time I’m there. From recommendations, to wine knowledge, to service and hospitality they are truly top tier. Love this place and the staff. I had a great birthday once again. Thank you guys for making it special!
