From the crisp elegance of a 2018 Reserve Adelaide Hills Chardonnay, it's cool-climate acidity dancing alongside the delicate sweetness of Southern Rock lobster tail, to the rich, marbled perfection of Rangers Valley wagyu striploin, elevated by Penfolds’ 2021 California Cabernet Shiraz bold notes, each course opens a seamless dialogue between plate and glass, crafted to awaken the palate and honour the artistry of pairing. A collaboration between two masters of their craft, the evening concludes with one of Penfolds’ most lauded vintages, the 2018 Grange SA Regional Blend served with a cloth-ashed cheddar from Maffra Cheese Co.
