   The most important part of a restaurant experience has to be the food, and evolution punched all those buttons. Heavenly scallops in risotto

   I made reservations for 3 sitting at the high top area for 1.5 hrs before I was to see a show at the Palace. I specifically told our wait staff that we were on a time crunch. The restaurant was not busy at all. It took an hour to get out a Caesar salad, shrimp and a bistro burger. No one checked in on us after delivering the first round of drinks. Needless to say, I was disappointed 😟

   Very pricey, but great for a special occasion, which this was. Only disappointment was, given the prices, they added a three percent surcharge (about $8) for using a credit card! Should we have brought three or four hundred dollars in cash? They could have had higher prices, like a dollar, on individual items and it would have worked out. It ended up leaving a sour taste after an otherwise great experience.

   Food was fine. Drinks were fine. It was very similar to the chophouse. Besides being so loud you couldn’t really hear the person next to you talking. With how many older people were there, I’m surprised they were able to have a conversation. We won’t be back to be honest. We’ve had much better meals elsewhere for half the cost. Money was not a factor. If this was free I still believe I would choose somewhere else.

   The oysters were excellent, as was the caesar salad we split. For the main course, the scallops risotto and gnocchi cacio e pepe were excellent. The seating was comfortable, and the ambiance was warm and stylish.

   Really enjoyed our 4th trip to EVO in 2025. The beef rib was incredibly rich and delicious - not for the faint of heart. Also enjoyed the scallop crudo, ceasar salad, chicken schnitzel and severla desserts. I think I would pass on the mussels next time as they were larger than I prefer and I'd prefer more broth. Somm Brian helped select a Brunello that was outstanding.

   The restaurant is beautiful, and tons of bar seating (though we were not there for bar seats on Saturday night). There were 4 of us. The food was served haphazardly, neither the appetizer nor main course came together as a group. Food got cold while waiting for the rest of the orders. The waiter seemed overwhelmed and could not remember the conversations that he'd had with us. The noise level was extreme - not the place to go for a catch up with friends.

    From the moment we walked in we were greeted by friendly, courteous, and professional staff, and we were treated that way the entire night. The food was exceptional in both taste and presentation. It is truly a crafted, personalized experience, not just a night out to dinner. This was our first time at Evolution and it will not be our last.
